Navaratan or Navaratna means Nav (Nine) Ratan (gems or jewels) which refers to the use of nine key vegetables of your choosing. Different combination of vegetables can be used to prepare this recipe to suit to the individuals’ taste.
Navratan tastes delicious with Pulao, chapatis, naans and plain rice.

For Navaratan Recipe
4 tbsp Oil
1½ tbsp Butter
½ medium sized Cauliflower
100 grams French beans
2 medium sized Carrots
3 medium sized Potatoes
1 small sized Capsicum
¼ cup Sweet corn
¼ cup Green peas
Salt to taste
1 Bay leaf
2 dry chillies
8-10 Black peppercorns
4 Green Cardamoms
4-5 Cloves
3-4 Cinnamon
3 medium sized Onion
½ tbsp Ginger paste
1 medium sized Tomato paste
6 Green Chilli
¼ tsp Ginger powder
½ tsp Coriander powder
2 tbsp Melon seeds
2 tbsp Poppy seeds
25 grams Cashew nuts
25 grams Raisins
1 litre Milk
