📝 Elephant Apple (Chalta) Pickle Recipe

​Step 1: Preparing the Chalta
​Take a large Elephant Apple (Chalta), wash it well, cut it into pieces, and boil it with a little salt (Nūn). 🍲
​After it cools, drain the water, lightly mash the pieces, mix with a little more salt and turmeric powder (Halud), and keep it in the sun for some time. ☀️
​Step 2: Preparing the Spice Mix
​Dry roast 1 teaspoon each of cumin seeds (Jire), fennel seeds (Mouri), wild celery seeds (Radhuni), coriander seeds (Dhōne), a few fenugreek seeds (Mēthi dānā), and a few dry red chilies (Shuknō lonkā). 🔥
​Grind these roasted ingredients into a coarse powder.
​Step 3: Cooking the Achar (Pickle)
​Heat some mustard oil (Shōrshē Tel) in a pan.
​Add Panch Phoran (five-spice blend) and then add the prepared Elephant Apple pieces. Sauté for two minutes.
​Add jaggery (Gur) as needed and 1 cup of water (add a little more salt if necessary). Cook until the jaggery melts and the mixture reaches a thick consistency. 🍯
​Keep the heat low during this time.
​Once the jaggery and Chalta are well mixed, sprinkle the ground spice powder over the top and take it off the heat.
​The delicious Chalta Achar is now ready! 🎉"
