Re – Search Hospitality: “A tradition to trust"
The Department of Hospitality and Hotel Administration at Assam Don Bosco University successfully conducted a Bartending Workshop in collaboration with Bartenders Club on 20 March 2026 at the F&B Practical Lab, Block 5. The workshop provided students with practical exposure to beverage preparation, mixing techniques, glassware handling, and presentation skills. Participants actively engaged in demonstrations and hands-on sessions led by industry experts. The programme enhanced professional competence, creativity, and confidence among students, while strengthening industry-academic collaboration. The event concluded successfully with enthusiastic participation and valuable learning outcomes for future hospitality professionals

The Department of Hospitality & Hotel Administration, Don Bosco University, organized an Educational Field Trip to Lum er Pyngngad on 28 February 2026, offering students a refreshing blend of learning and experience. Surrounded by serene pine forests, the visit focused on experiential learning, eco-tourism awareness, and sustainable hospitality practices beyond classroom boundaries.
Students actively engaged in observation, interaction, and team-building activities. A delightful outdoor lunch further enriched the experience, where everyone participated in serving and sharing food together, reflecting true hospitality values. The trip strengthened academic understanding, leadership skills, coordination, and friendship—proving that meaningful education flourishes when knowledge meets nature and real-world exposure.

A practical culinary session was successfully conducted focusing on Crispy Urulaikizhangu–Gobi Milagu Varuval, Milagu Muttai Curry, and Elumichai Saadham, highlighting the balance between tradition and modernity. Students explored classical South Indian cooking techniques such as pepper-based tempering, texture control, and spice layering, while also learning contemporary methods like crisp coating, controlled oil usage, and refined finishing.

The fourth semester gastronomy practical at Department of Hospitality & Hotel Administration ADBU began with a strong foundation in Indian Quantity Food Production, focusing on volume cooking and consistency. Students worked on a vibrant menu inspired by classic dhaba flavors. The session opened with Murgh Pakora Chaat, where crispy chicken pakoras were combined with mint flavored yoghurt, laccha onions and spices, highlighting balance and texture. This was followed by Tandoori Chaska Bhaji, teaching the use of marinades, high heat, and smoky flavors in large-scale preparation.
For the main course, students prepared Dhabe Wali Dal, learning slow cooking, tempering, and standardization of taste for bulk service. The meal was completed with Kalonji Roti, introducing dough handling and uniform production. Through this practical, students understood the challenges of quantity cooking, such as timing, portion control, and flavor consistency. The session successfully connected traditional Indian cuisine with professional kitchen practices, preparing students for real-world catering and institutional food operations.

Second semester gastronomy students of Department of Hospitality & Hotel Administration ADBU explored French cuisine through a hands-on practical session focused on classical flavors and techniques. The menu began with Salade de pommes et noix, a fresh apple and walnut salad that balanced sweetness and crunch. Students then prepared Broccoli braisé au vinaigre, learning gentle braising and acid balance. The main dish, Poulet au vinaigre, introduced the use of vinegar for depth and aroma in French cooking. The meal was completed with Pilaf à l’oignon, where slow-cooked onions added richness to the rice. This practical helped students understand simplicity, technique, and harmony in French gastronomy.
