The majority of Irish sweaters are not made with Irish wool, they are just knitted in Ireland - a fact which many people are unaware of.

The reason for this is more complex than you may expect. But both Blatnaid Gallagher, Founder of the Galway Wool Coop and Galway Sheep Farmer, and Jean Long, Master Hand Knitter- have made it their business to under stand why and advocate for change.

Chris Troy, Head Gardner at Future Orchard, will be leading a hands-on series of 1/2 day courses on caring for an apple orchard in Winter. ❄️

On January 26th, the Ballymaloe Organic Farm School welcomes Mimi Crawford, a raw milk producer and advocate from Crawfords Farm, to teach a one day course called “Everything you Wanted to Know about Raw Milk but Were Too Afraid to Ask”. 🥛🐄

This course is for current dairy farmers wanting to produce raw milk, prospective dairy farmers, consumers interested in raw milk, or anyone who just wants to learn more about this product!

Begin by taking a walk through the gardens and foraging for seasonal florals, branches and greens. Learn what is in season during the winter, how to look for color, texture and size when gathering for decorative pieces.🌿

Once in the workshop space, Iona will demo a variety of tips and tricks using sustainable materials for a variety of Chrismas decorations- including but not limited to- wreaths, garlands, centerpieces, trees etc. There is so much waste during this time of year, and often plastic frames/ties (while cheap), only lasts a couple weeks and cannot be re-used next year at the same quality level. Learn how to care for your fresh garlands and Christmas tree for a long, fresh look and the best ways to secure wreaths and other items to doors and walls, and so much more...🎁

After lunch, you will have the opportunity to put what you learned in demo into practice, and select a hands-on project to work on and bring home with you that day! Get inspired by the gardens, the demo, and the opportunity to work closely with Iona, and make a piece that is uniquely you and that will last for many Christmas seasons. ✨✨✨

New Course Update! 🧑‍🌾👩‍🌾

Delivered by Klaus Laitenberger, this course runs one day per month from February to October 2026. This ten-day gardening course offers a unique, hands-on learning experience set in the beautiful surroundings of Ballymaloe Cookery School. Participants will learn how to grow their own vegetables, herbs and fruit. 🪴🍅

Each session will combine:

Seasonal garden walks- observing what’s happening in the various gardens in Ballymaloe Cookery School including their new 1 acre greenhouse🥬

Practical gardening- participants will establish a course garden from scratch, transforming a plot of ground into a productive organic garden 🪏

Thematic sessions- a focused two-hour module each month, blending theiry and practice on key organic gardening topics 📖

🐝 Two days with Matt Somerville at the Ballymaloe Organic Farm School, learning how to create the kind of hive a wild bee would naturally choose.

On farms and in woodlands, bees often nest in deep tree hollows with thick, insulating walls. These quiet, sheltered spaces allow them to build their own comb, regulate their temperature and develop stronger genetics through natural selection. Matt’s log and freedom hives mirror these natural cavities and are designed entirely for the wellbeing of the bee, not for honey production.

🌳 With so much habitat lost to tidy hedgerows, pesticides and modern land management, providing simple, stable nesting sites can make a real difference. Colonies in well-insulated, tree-like cavities have been shown to survive better, with lower disease pressure and greater resilience.

🌼 Pollinators like bees support much of our food system. Even crops that do not rely directly on pollination depend on the fertility-building herbs, clovers and wild plants that do. Supporting wild bees means supporting the wider ecological web that healthy soil and sustainable food rely on.

🐝 Over the two days, the students learned not just how to build these hives, but why creating space for wild bees matters – offering shelter and freedom in landscapes where natural nesting sites are increasingly scarce.
