Τα λιπαρά αποτελούν μέρος της ανθρώπινης διατροφής, από τη παλαιολιθική εποχή, ως μία πλούσια πηγή ενέργειας, η διαθεσιμότητά τους έχει αποτελέσει καταλύτη για την εξέλιξή μας. Τα τελευταία χρόνια, τα κορεσμένα λιπαρά οξέα🥩🧀🍖 έχουν κατηγορηθεί, κυρίως όσον αφορά την υποτιθέμενη σχέση τους με αυξημένο καρδιαγγειακό κίνδυνο (CVD) . Αυτό έχει επηρεάσει τους διεθνείς κανονισμούς, με αποτέλεσμα τη γενική μείωση τους στα τρόφιμα παραχωρώντας τη θέση τους στους Επεξεργασμενους υδατάνθρακες. Αυτός ο ισχυρισμός, σύμφωνα με αναρίθμητες έρευνες ωστόσο, δεν αποδεικνύεται αυστηρά, και υπάρχει ένα μεγάλο μέρος της πρόσφατης έρευνας που όχι μόνο διαψεύδει τη δαιμονοποίηση τους, αλλά και τονίζει νέα, μη ευρέως γνωστά οφέλη για την υγεία μας που μπορεί να έχουν, ανάλογα το είδος και το μήκος της αλυσίδας τους (χημικά).Η επεξεργασία τους εντός των τροφίμων 🥞🥓🍔🌭🍩και η συνολικότερη προσέγγιση του διατροφικού πλάνου αποτελεί μακράν σημαντικότερη παράμετρο από την πλήρη αποχή τους.
