⭐ The perfect after school snack with My Fussy Eater ⭐

Why is this recipe sensory-friendly?

💜Soft and fluffy texture, making them easy to bite, chew and eat
💜 Mild and familiar flavour, without strong tastes or smells
💜Small size makes them easy to hold and can be eaten in just a couple of bites, which may feel more manageable
💜 They can be served completely plain. Berries and chocolate chips are optional

What you need:
• 2 medium eggs
• 50g melted butter
• 130g Greek yogurt
• 50g honey
• 150g self-raising flour
• 2 tbsp sugar

To top:
•Fresh berries / Chocolate chips

The steps:
1. Preheat the oven to 180c.
2. Add the eggs, melted butter, Greek yogurt and honey to a bowl and mix.
3. Add the flour and sugar and mix again.
4. Divide the mixture between a 24-hole mini muffin tray. If using a silicone tray there is no need to grease it but for mental trays you will need to grease with some oil.
5. Top with berries, chocolate chips or leave plain.
6. Bake in the oven for 15 minutes.
7. Allow to cool for a few minutes before removing the mini muffins from the tray.
8. Serve the mini muffins with some fruit for a tasty afternoon snack.

Makes twenty-four mini muffins. They will keep in the fridge for a couple of days or can be frozen for up to two months. Defrost at room temperature a couple of hours before eating.
