Halfway through the summer holidays… and are you running out of lunch ideas yet? 😂
The constant “I’m hungry!” is REAL. 🙈
When you’re feeding little ones day after day, it can be hard to keep coming up with meals that are easy, filling, nutritious AND something they’ll actually want to eat.
So here’s one to save for your holiday lunch rotation 👇
🍠 SWEET POTATO & VEGGIE PROTEIN TART 🥚
This one is packed with protein and fibre, loaded with veggies and is really easy to adapt depending on what you’ve got in the fridge.
You’ll need:
• 2 large sweet potatoes
• 6 eggs
• 150g cottage cheese (about 10 tbsp)
• Your favourite chopped veggies — I used pepper, courgette, kale & tomatoes
• Cheddar cheese, grated
• Salt & pepper to season
To make it:
1️⃣ Cook and mash your sweet potatoes, then spread them over the base of a cake tin.
2️⃣ In a bowl, whisk together the eggs, cottage cheese and your chopped veggies. Season well.
3️⃣ Sprinkle some grated cheddar over the sweet potato base, then pour over your egg mixture.
4️⃣ Top with another generous sprinkle of cheddar. 🧀
5️⃣ Bake at 180°C for 30–40 minutes, until golden and the middle is set.
And that’s it! 🙌
It’s delicious served warm, but also works really well cold — so it’s a great one to have ready in the fridge for hungry holiday kiddos.
