Creamy Feta & Spinach Stuffed Flatbread
Ingredients:
2 cups fresh spinach, chopped
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/2 cup cream cheese, softened
3/4 cup crumbled feta cheese
1 tablespoon plain Greek yogurt (optional, for extra creaminess)
4 large flatbreads or naan
1 tablespoon butter or olive oil (for cooking)
Directions:
Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
Add chopped spinach, salt, pepper, and red pepper flakes. Cook for 2–3 minutes until wilted. Remove from heat and let cool slightly.
In a mixing bowl, combine cream cheese, feta, and Greek yogurt. Stir in the cooled spinach mixture until creamy and well blended.
Spread a generous layer of the creamy spinach-feta filling over one side of each flatbread. Fold in half or sandwich with another flatbread.
Heat a skillet or griddle over medium heat and brush lightly with butter or olive oil.
Cook each stuffed flatbread for 2–3 minutes per side, until golden brown and crisp.
Slice into wedges and serve warm with a side of tzatziki or yogurt dip if desired.
