📌Lab-e-shireen:
📝 Lab e shireen is a classic Arabian dessert that served as Eid special dessert in Pakistan. It is a custard and fruit based dessert that is highly refreshing and rich in taste usually served on Eid or in the holy month of Ramdan. You may even call it Pakistani fruit custard. This dessert lab e shireen tastes best when it is chilled before serving.
🌸INGREDIENTS:
👉1/2 liter (2 cups) full fat milk
👉3/4 cup sugar or to taste
👉5 tablespoon custard powder
👉1/2 cup Coloured vermicelli (boil and strain through cold water
👉1 cup Fruit cocktail (strain the juice of cocktail completely)
👉200 ml Fresh cream
👉1/4 cup tapioca pearls /sago seeds (boiled and wash with cold water & set aside.
👉1 packet Red jelly (cook and chill then cut into cubes)
👉1 packet Green jelly (cook and chill then cut into cubes)
👉Chopped nuts (almonds, pistachios, cashews) as required
Your favourite ice cream (optional )
🌸METHOD:
1️⃣In a mixing bowl dissolve custard powder in 1/2 cup of milk.
In a cooking pot add remaining 1 and 1/2 liter of milk, dissolved custard mixture and sugar. Combine well.
Now turn on the flame and cook on low flame while stirring continuously till the milk thickens. Check the thickness of milk and remove the pot from stove.
2️⃣Let the custard cool down completely then take out in a bowl.
Add boiled and strain vermicelli. combine everything.�
Then add fruit cocktail and fresh cream and mix well.
Add tapioca pearls /sago seeds and cubes of red and green jelly in the custard mixture. Combine these as well.
3️⃣Lastly add chopped dry fruits in the lab e shireen.
Garnish with jelly cubes and chopped nuts.
Chill in the refrigerator before serving.
Scoop some your favourite ice cream on top and served chilled.
💡Notes:
You may add fresh fruits like apple, banana, pineapple or grapes as well in the lab e shireen.
Add or skip the dry fruits/nuts as per your choice.
Many recipes involves mini ras gulla in the lab e shireen and you may add as well.

📌TUNA 🍣CUCUMBER 🥒SANDWICH🥪.
This sandwich is really easy to make and super versatile. Keep it simple with just cucumber and lettuce or add more veggies!
this is the perfect recipe for picnics, summer celebrations, birthday parties, baby showers, and other events
kids and adults love these
you can be super flexible with the ingredients for the tuna spread.
🌸INGREDIENTS:
1 can of tuna in water, drained
3 1/2oz soft cheese or cream cheese
2 Tbsp capers + 1 tbsp of the liquid (chopped if large)
1 shallot or 1/2 small red onion, finely chopped
1 Tbsp extra virgin olive oil
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1/2 tsp chilli garlic sauce or hot sauce
1-2 tbsp finely chopped fresh chives
4-8 slices of bread
1/2 cucumber, thinly sliced
1 large tomato thinly sliced
Some lettuce
🌸METHOD:
Prep your bread slices and set aside. You can toast them right before serving if desired.
Into a large bowl, add the tuna, soft cheese, capers, chopped shallot, olive oil, sea salt, pepper, chilli garlic sauce, and fresh chives. Use a fork to break up the tuna and mix everything together well.
Taste and add more salt, pepper, or more of the tangy liquid from the capers.
When ready to serve, toast your bread if desired and load up with tuna spread. I like dividing the spread between only two sandwiches, or more if you adding additional ingredients to each sandwich.
Add sliced cucumber,tomato and lettuce to the sandwich and any other toppings you like and top with the other slice. Repeat with remaining bread slices.
Serve warm or cold !

📌Whipped Garlic Confit Spread:
🌸INGREDIENTS:
1 cup garlic cloves
4 Tbsp olive oil or Butter or as needed ( I used both of them half and half )
1/2 tsp salt, adjust to taste
1/4 tsp black pepper
Pinch of red pepper flakes, optional
1 tsp chopped parsley
1 tsp lemon juice, optional
🌸METHOD:
Peeled garlic cloves are submerged in olive oil (or butter) and cooked slowly, either on the stovetop or in the oven, until golden.when done then cool completely.
Next Add the garlic confit cloves with oil/butter to a food processor or blender.
Add parsley.
Blend until the garlic starts to turn into a thick paste.
Add salt, black pepper, red pepper flakes, and lemon juice.
Blend again until fully smooth and spreadable.
Taste and adjust seasoning or oil as needed.
Transfer to a clean glass jar or bowl.
📍Storage:
Store in an airtight container in the refrigerator.
Use within 5 to 7 days.
Always use a clean spoon.
If the spread firms up in the fridge, let it sit at room temperature for 10 to 15 minutes before using.

📌Sugar-Free Cottage Cheese Cloud Bread:
🌸INGREDIENTS:
3 large eggs, separated
3 oz (85g) full-fat cottage cheese, blended until smooth
1/4 tsp cream of tartar
1/8 tsp salt
1/4 tsp garlic powder 1/4 tsp Italian herbs OR you can add their favourite seasoning
🌸METHOD:
Preheat oven to 150°C/300°F.Line a baking sheet with parchment paper.
Add salt,garlic powder and Italian herbs in cottage cheese and blend until completely smooth (this helps the bread bake evenly and stay fluffy).
Whip egg whites
Add cream of tartar to egg whites and beat until stiff peaks form.
Whisk egg yolks with blended cottage cheese until smooth.
Gently fold the yolk mixture into the whipped egg whites just until combined (don’t overmix).
Spoon into 6–10 rounds on the baking sheet (about 3–5 inches wide).
Bake 25–30 minutes until golden and set, then cool 10–15 minutes before removing.
📍How to Serve:
* Use as low-carb sandwich bunsor sliders.
* Toast and top with avocado, cream cheese, or a fried egg.
* Serve with soups or salads as a light, high-protein side.
* Drizzle with honey and cinnamon for a sweet twist.
📍How to Store:
* Store leftovers in an airtight container in the fridge for up to 3 days.
* To reheat, toast lightly or warm in the oven for a few minutes—this helps restore the fluff!
