Citrus & Olive Oil Cake 🍊 🫒 Proper summer vibes.

It may be too hot to bake pastry but it's never too hot to MAKE and EAT CAKE. Layers of olive oil sponge, a luscious citrus mascarpone cream and beautiful edible flowers, because why not 🤷‍♀️

Thanks Nicola Lamb for an EPIC cake recipe from SIFT.

I would've taken a pic of the inside but my husband devoured before I got a chance 😭

I am thrilled to announce I have officially completed my Advanced Lamination course with Jimmy Griffin at The School of Artisan Food ! It was an incredibly rewarding experience, and I gained so much invaluable knowledge. I can’t wait to bring these elevated skills to my upcoming pop-ups and bakery classes 👩‍🍳🥐🙌

I’m especially excited to share "The Madison," created by the brilliant minds at Eleven Madison Park. This masterpiece features croissant dough cross-laminated with a rich cocoa insert, stuffed with a gooey, fudgy brownie right in the centre—because why not go all out? 😅

Now, my next big mission is to invest in an electric dough sheeter to help bring all these delicious pastry dreams to life! 🤞

Throwback to last Friday 's Pop-Up ...

It's been a year since I began the monthly pop-up takeover and it has to be one of the hardest gigs I've ever done 😅
The early wake up call is a killer (especially when you're not a morning person and you've got 2 little kids 🙈)! However, it's been a journey to say the least. It's never easy going back to work after maternity leave, let alone trying to start your own business. I salute all the women out there doing their thing whatever it may be- it's not easy but I know it'll be worth it. No pain no gain, right?

Lots of exciting things are happening in the background including a new website, a re-brand and some exciting new cookery classes to book onto from October onwards.

Watch this space 😊

Blackcurrant & Cream BUN 👩‍🍳

Soft, fluffy brioche dough with lashings of cinnamon butter (still needs more in my opinion!).

Finished off with a luscious vanilla custard and a tart blackcurrant compote (blackcurrants from my mother in law's garden- delish)

Recipe Testing for my new enriched dough cookery class... coming soon!

I froze my shaped buns and then thawed in the fridge overnight. Thanks to my 6 year old daughter waking me up at 5am, we had buns ready for breakfast at 8am this morning 😅

FETA & HONEY PASTRY WITH SESAME & FENNEL SEEDS... a flaky, buttery croissant dough- rolled up with good quality feta cheese, drenched in honey & the good olive oil 😉, finished with a generous sprinkling of Sesame & Fennel seeds. HEAVENLY!
This still has to be one of my fave pastries I've ever made. I know it's quite niche but I'm bringing it back at next pop-up- let's see who else is on team Feta 😊
