Kurutulmuş patlıcan, is a traditional Turkish ingredient made by drying hollowed-out eggplants in the summer sun. It’s a common sight in many parts of Turkey, especially in the southeastern and central regions like Gaziantep, Şanlıurfa, Mardin, and Malatya, where strings of dark, wrinkled eggplants hang in long rows on balconies or terraces.
