Another one for the wall.
Not the most stellar result and not indicative of the training I’ve put in for this one - but grateful nonetheless and proud I got myself to the start and finish line, despite the obstacles I encountered today.
In my honest opinion - London Marathon is much too crowded and creates a trip hazard every step of the way, and way too many bottlenecks trying to get around other runners, sometimes no choice but to join the bottleneck for km’s at a time.
Back to triathlon training now with Ironman 70.3 Weymouth in September.

Tomorrow we go to war.
My trilogy at the London marathon - 3rd year back to back.
Shooting for a PB - let’s see what we can produce.
Such a privilege to be able to move our bodies like this - get to make the most of it.

started documenting myself learning new easy & healthy meals for me and the fam - callin it FIT FAM FUEL
if dinner feels like another decision you don’t have energy for
this one might save you
this killer harissa-style roasted veg couscous
simple food that punches above its weight
1 tray, minimal work, big flavours and big payoff
how to make it
• heat oven to 180°C / 360°F
• choo veg you like (zucchini, peppers, onion, garlic, cherry tomatoes …)
• drizzle with olive oil, salt +pepper
• roast 30-40min
dressing (do not skip this)
• olive oil (150-250ml)
• 2 tbsp ground cumin
• 2 tbsp tomato purée
• 1 tsp cayenne (do a version w/o for the kids)
• 1 tbsp fresh lime juice
• mix it up
to finish
• make couscous (takes 5 mins)
• top with roasted veg
• add dressing
• throw in Greek yoghurt + feta
• optional extras: raisins, baby leaf salad, whatever’s in the fridge/pantry
why it works
• veg packed, high fibre
• carbs for energy without heaviness
• healthy fats for satiety
• solid protein from toppings
• easy to scale for kids/adults
• stores in fridge for 2 days
• minimal headache
this isn’t about perfect nutrition
it’s about food you’ll actually make and repeat
