It’s been a while—a whole year, in fact—and I wanted to take a moment to acknowledge the quiet. Life has a way of taking us on unexpected journeys, and during this past year, mine pulled me behind the scenes. There’s been reflection, personal growth, and even a few burnt casseroles along the way.
So here’s to a fresh start. I’m back, and I’m excited to reconnect—with new content, delicious ideas, and a renewed passion for the kind of wellness that feels good from the inside out.

Hello everyone! I missed posting here but life has been some kind of a rollercoaster lately. And with so close to Christmas, being overly busy is a common experience for many people. With the demands of work, personal responsibilities, and other commitments, it's natural to feel busy at times. However, it's important to find a balance and prioritize self-care to avoid burnout. It can also be helpful to evaluate your commitments and consider ways to manage your time more effectively. Remember to take breaks, delegate tasks when possible, and make time for activities that bring you joy and relaxation.
Ingredients: serves 2 and takes @20 minutes to cook.
- 250g rump steak, sliced into thin strips ( can use chicken breast instead)
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons of olive oil
- 1 tablespoon of fajita powder
-1 jar fajita sauce
- Salt and pepper to taste
- Tortillas or rice for serving
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, jalapeños.
This time I choose to serve it with plain rice and it was still delicious.
Instructions:
1.Start by finely slicing the beef or chicken.
2. Place the sliced in a bowl and add 1 tablespoon fajita powder and 1 tablespoon olive oil. For more flavour let them marinate for at least 30 minutes.
3.Slice the peppers and onions.
4.Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat.
5.Add the sliced bell peppers and onions to the wok and cook for about 3-4 minutes. Add the jar of fajita sauce and mix well.
6.In a frying pan, add the meat and cook depending on the meat you are using. For beef I only slightly brown it, 3-4 minutes. Chicken needs to be cooked thoroughly, at least 7-10 minutes.
7. Return the cooked meat to the wok with the vegetables and fajita sauce and stir to combine. Cook for an additional 2-3 minutes to heat everything through.
8.Serve with rice or tortilla wraps.
