🌮 FAJITA STEAK LOADED SWEET POTATO NACHOS
Ingredients — serves 2–4:
🥩 2 steaks (we went for ribeye)
🍠 4 sweet potatoes
🌶️ 2 peppers
🧅 1 onion
🍅 a few cherry tomatoes
🧅 half red onion
🧀 20g reduced-fat cheddar
🧀 20g grated mozzarella
🥑 4 tbsp guacamole
🥛 4 tbsp light crème fraîche
🌮 fajita seasoning
🍗 1 tbsp chicken seasoning
🫒 Olive oil
🍯 Drizzle of honey
🌶️ Chilli flakes
🌿 Fresh parsley
🍋 Squeeze of lime
🧂 Salt & pepper
1️⃣ Sweet potatoes: Slice into rounds and place on a baking tray. Drizzle with olive oil and season with the fajita + chicken seasoning. Bake at 190°C for around 35 minutes.
2️⃣ Onion & pepper: Slice the onion and pepper and cook in an oiled pan. Add ½ the fajita seasoning and cook on medium heat for around 20 minutes, until soft and caramelised.
3️⃣ Steak: Season the steaks with salt and pepper, then coat with the remaining fajita seasoning. Cook in an oiled pan to your preferred level
Leave to rest for a few minutes
4️⃣ Tomato salsa: Chop the tomatoes and finely chop the red onion. Mix together with a drizzle of olive oil and a squeeze of lime.
5️⃣ Cheesy sweet potatoes: Once the sweet potatoes are cooked, sprinkle over the cheddar and mozzarella and return to the oven for around 10 minutes, until golden and melted
6️⃣ Build your nachos: Layer up the sweet potatoes with the caramelised onion & pepper, sliced steak, tomato salsa, guacamole and crème fraîche. Finish with a drizzle of honey, chilli flakes and fresh parsley 🤤
And that’s it! The perfect high-protein, comforting dinner that feels like a treat but is still made with mostly simple ingredients. 🙌🏼
