"Fermented wheat flour” sounds wholesome—but in some factory-made breads it is produced specifically to generate propionic acid, helping inhibit mould and extend shelf life. Because the acid remains within the fermented flour, it can legally appear on the label without being declared as preservative E280. Legal? Yes. As transparent as consumers might expect? You decide. At Joe the Baker, fermentation means flour, water, salt and time—not a clean-label shelf-life trick.

Good morning bread-heads and welcome to the Wednesday. Summer has peaked and I hope you all had a lot of fun. While you're busy getting ready for the scholastic year to begin maybe give a thought to incorporating real sourdough bread into your menus. Our bread is fermented using flour from Irish and UK millers that source grain from Irish and UK growers that practice organic farming. Sea salt and water. We slice it for you and it holds up extremely well to whatever fillings you're in to. Today we are delivering to Enniskillen, Fivemiletown, Clogher, Lisnaskea, Maguiresbridge and Lisnarick.

We are working away this Wednesday making original sourdough bread for our wonderful customers. As much as possible I keep my community in mind when making this bread it's a wonderful combination of hard-work and reflection. Today we are keeping my friend Seamus in our thoughts as we mix, fold, shape, bake, slice and deliver. Seamus and my family have a long connection in both business and socially. He was front and centre when I launched this business encouraging me at every opportunity. He would bring visitors to the bakery just see what the heck I was doing with "feckin" bread. When you passed Seamus on the street he was always engaged with another of us, chatting and laughing then he would throw the hand up and check the watch and be like "i must head here, i'm late to see someone!" Seamus what a privilege it has been to be either the one waiting on you, chatting you or passing you. Skin-town will look for you in the eclipse this evening my friend, good luck. 💚

Our Monday's bread is seriously tangy. It benefits from an extra long slow and cold fermentation period that really develops the flavour intensity. Available in Enniskillen, Lisnarick and Lisnaskea. See you soon. 💚

You're probably eating really amazing toast right now so I won't bother you. In case you're hungry and looking for a overall taste sensation we have been delivering bread today in Enniskillen, Clogher, Fivemiletown, Lisnarick, Maguiresbridge and in Lisnaskea. We are also in some fine eateries around the county. For those citizens of the Commonwealth of Omagh hang on we are back in your neighbourhood Thursday tomorrow. Good morning Breadheads we are back stocking up all retailers in Lisnaskea, Ballinamallard, Irvinestown, Lisnarick, Tempo, Maguiresbridge, Enniskillen and The Croft.
