🍆 Italian Aubergine Parmesan Balls

A great make ahead snack for instructors who need something easy to grab on the go! 🇮🇹

Ingredients
• 2 aubergines, about 500 to 600g
• 1 egg
• 75g breadcrumbs or gluten free breadcrumbs
• 50g Parmesan
• 2 garlic cloves, finely chopped
• 2 tbsp fresh parsley
• 1 tsp oregano
• Salt & pepper
• Optional: small cubes of mozzarella ❤️

Soften the aubergine — choose your method:

💧 Boil: Peel and chop the aubergine, then simmer in salted water for 8 to 10 mins until very soft. Drain really well and squeeze out excess water.

🔥 Air fry: Cut into chunks and air fry at 190°C for 15 to 18 mins until soft.

🔥 Oven: Roast at 200°C fan for 25 to 30 mins.

Make the balls:
Mix the softened aubergine with the egg, breadcrumbs, Parmesan, garlic, parsley and oregano. Season well. Roll into balls and add a little mozzarella in the centre if you fancy!

Air fry: Brush with a little olive oil and cook at 190°C for 12 to 15 mins, turning halfway.

Or fry: Heat about 1cm of olive oil in a frying pan over medium heat. Fry for 3 to 4 mins per side, turning gently until golden and cooked through.

✨ Wheat free: Simply use gluten free breadcrumbs.

Perfect warm or cold and easy to pop into a lunchbox for a tasty veggie snack! 🇮🇹🍆

Variations of The Swimming

Pilates Swimming has a couple of lovely variations, and they create quite a different experience.

The lower, quicker version keeps the spine more elongated and relatively close to the mat. The arms and legs alternate in a faster, smaller movement. It’s fantastic for endurance, coordination, posterior chain strength and core control, without asking for as much spinal extension.

Then there’s the higher, more lifted version, where the chest, arms and legs come further away from the mat. This creates a much stronger spinal extension challenge, asking the back extensors, glutes and hamstrings to work harder while the abdominals stabilise the spine.

Neither is necessarily “better”
they simply have different purposes.

For someone who struggles with extension, the lower, longer version can be a great starting point. For someone with good control and appropriate spinal mobility, the higher version can provide an additional extension and strength challenge.

As always in Pilates, it’s about the right version for the person, not how high you can lift! 🧡
