If we had a booking for every time a mum thought "I don't know what to cook!"... well let's just say we wouldn't be worried about filling our classes 😉

Look, we get it, we've both been there. No food in the house, don't know what to do with the food you do have, don't have a spare second to even think about it. That's why we love quick and easy meals like this - a tortilla wrap, some tomato puree & cheese and voilá, pizza wrap!

Everyone fed, quick and easy (and low cost too!), plus the kids can get involved and make their own!

In our classes, we make a mix of quick and easy solutions like this, plus gradually building the skills needed for more complex recipes. And when you come back again and again, you'll build your very own Little Sprout Academy cookbook!

There's something really special about cooking with ingredients you've grown yourself. 💚

This broad bean & pea salad came straight from Deirdre's vegetable garden and is one of those recipes that's simple, fresh and perfect for getting children involved in the kitchen. They can help pod the broad beans, stir everything together and, of course, taste as they go!

Full recipe below.
Broad Bean & Pea Salad
Ingredients
• 70g broad beans (double podded if fresh)
• 130g peas
• Handful of fresh mint, chopped
• 45g feta, crumbled
• ½ tbsp lemon juice
• 1 tbsp olive oil
• Salt and black pepper to taste

Method
1. Add the broad beans to boiling water for 2 minutes then transfer to an ice bath.
2. Pod the peas and cook in boiling water for 4 minutes, then cool under cold running water.
3. Double pod the cooled broadbeans by pinching off the outer shell.
4. Mix the beans, peas and mint together.
5. Whisk the lemon juice and olive oil together and drizzle over the greens.
6. Add the feta and season to taste.
7. Serve straight away or chill before eating.

If you have leftovers, blitz or mash and use as a fresh avocado alternative on toast.

While Deirdre is sailing around the Mediterranean (don't worry, she'll be back soon! 🚢☀️), Katie will be there flying the Little Sprout flag, with our new roller banner too!

Come and say hello, find out what we're all about, pick up one of our FREE activity sheets, and let the kids enjoy some fun while you're there.

It's set to be a brilliant afternoon with stalls, face painting, a micro zoo, ice cream, music and lots more. We'd love to see some familiar faces and meet plenty of new ones too!
