From rock bottom to rediscovering my strength.

If you had met me 12 years ago, you wouldn’t have seen this smile. I was lost in postpartum depression, terrified for my son’s health and had let myself completely go after two emergency c-sections. I felt broken—physically and emotionally.

But piece by piece, I rebuilt. Not just my body, but my confidence, resilience, and purpose as a mom and a woman. Every struggle became a lesson. Every setback, a stepping stone.

Meal prep doesn't have to be difficult, time consuming or expensive.

Here's a meal I cooked last week:

1 cup dry lentils
1 zucchini, diced
2 tomatoes, diced
1 squash, diced
500g firm tofu, diced (can be replaced with chicken)
• 1 shallot, minced
3 garlic cloves, minced
Turmeric powder
Ginger powder
Sea salt
• Black pepper
Garlic powder
• Cajun seasoning

I didn't measure the spices.

I simply placed all the ingredients in my pressure cooker, covered them with water, and cooked for 10 minutes, followed by a 10-minute natural release.
That's it!
