Pad Thai for dinner & 🧑🍳👌🏼😋
- inkalife noodles
- 3 tablespoons reduced-sodium soy sauce
- 4 teaspoons rice vinegar
- 2 teaspoons lime juice
- 2 teaspoons olive oil
- Soy sprouds
- Chili peppers cut into thin strips
- 4 green onions, chopped
- 3 garlic cloves, minced
- 4 large eggs, lightly beaten
- 1/3 cup chopped fresh cilantro
- Chopped peanuts, optional
- Lime wedges
Cook the noodles and mix them with a sauce of rice vinegar, soy soaked and lime juice
Stir the veggies
Add the eggs
Mix all
Eat and enjoy 🥰

A healthy, easy to cook nutrient-packed dish. 🤩
Rice, lentils and quinoa with baked tomatoes, artichokes and hummus
Rice is free from cholesterol and helps to control hypertension. Compared to other grains, quinoa contains almost twice as much fibre. Lentils are full of nutrients like protein, vitamins and minerals and are very low in fat. They have very few calories but leave you feeling full!
Artichokes have shown to be anti-inflammatory and used as a digestive aid. Ranked as the number one overall vegetable for antioxidants, artichokes help combat oxidative stress related to chronic diseases and aging.
Tomatoes not only give this dish a great taste but also the cooking of tomatoes appears to increase the availability of key nutrients, such as the carotenoids lycopene, lutein, and zeaxanthin.
