01: 2 whole sea bass
02: 1 onion, sliced
03: 2 garlic cloves, sliced
04: ½ red pepper, sliced
05: 1 celery stalk, chopped
06: 1 ripe tomato, chopped
07: 150 ml white w**e
08: 100 ml olive oil
09: 1 bay leaf
10: Chopped parsley
11: Salt and black pepper
12: Juice of 1 lemon
13: 10 small potatoes, cooked with the skin on
14: Coarse salt
15: 2 garlic cloves, crushed
16: 100 ml olive oil
17: Chopped parsley

STEP BY STEP

Step 01: Season the sea bass with salt, black pepper, lemon juice, chopped garlic and a drizzle of olive oil.
Step 02: Let it marinate for 30 minutes to absorb all the flavours
Tip 01: Marinating the fish helps keep it moist and flavourful while roasting.
Step 03: In a baking tray, combine the onion, sliced garlic, red pepper, celery, bay leaf and tomato.
Step 04: Season with salt, pepper and paprika, then drizzle with half of the olive oil and mix well.
Tip 02: The vegetables create a delicious natural sauce while roasting.
Step 05: Place the sea bass on top of the vegetables.
Step 06: Pour over the remaining olive oil and the white w**e.
Step 07: Bake in a preheated oven at 200°C for about 30 minutes.
