Our three favorite C’s: Cottage Cheese Cookies.🍪 IIN alum @eatingbirdfood has outdone herself with this high-protein bake. Full recipe + directions below: Ingredients: 1 cup large curd cottage cheese ¼ cup pure maple syrup 1 tsp vanilla 1 cup almond flour 2 Tablespoons melted coconut oil ½ cup vanilla protein powder ½ cup chocolate chips + more for topping Directions: -Preheat oven to 350°F and line a baking sheet with parchment paper. -In a blender, add the cottage cheese, maple syrup and vanilla. Blend on high until smooth. -In a mixing bowl combine almond flour and protein powder. Add the coconut oil and cottage cheese mixture. -Stir until combined. Fold in the chocolate chips. -Scoop dough onto a prepared baking sheet using a medium cookie scoop and use your hands to flatten the cookies just a bit so they’re in a cookie shape. You can also roll the cookie dough into a ball and then use your hand to flatter for a more uniform shape. Add a couple more chocolate chips on top of each cookie. -Bake for about 15-16 minutes or until the bottom of the cookies are golden brown. Let cool and enjoy!

Our favorite recipes require two things: Seasonal ingredients and minimal dishes.🔪 Enter: Sheet Pan Harvest Chicken and Veggies from current Health Coach Training Program student, @olivia.adriance. Full recipe below: Ingredients: •4 chicken thighs, bone-in and skin-on •4 tbsp olive oil, divided •2 tbsp balsamic vinegar •1 tbsp fresh thyme leaves •1 tbsp fresh rosemary, minced •3 cloves garlic, minced •1 lb brussel sprouts, halved •2 delicata squash, halved, seeded, and cut into 1/2” moons •3 shallots, cut into about 3/4” rounds •2 tbsp maple syrup •salt and pepper to season Directions: -Preheat your oven to 425 -Add your chicken to a bowl and massage in your balsamic, minced garlic, herbs, 2 tbsp of olive oil, season with salt and pepper and set aside -Cut up to your brussel sprouts, squash, and shallots and toss them with your remaining olive oil, maple syrup, and season with salt and pepper -Add them to a sheet pan with your chicken, skin-side up, in a single layer -Roast in the oven for about 45 min (checking at 35 min) -Broil for another 2 minutes if needed to get a crisp on your chicken skin -Serve and ENJOY! Note: if using boneless thighs, start your veggies 10 minutes before adding your chicken to the sheet pan
