✔️ 30ml Purple prickly pear skin infused Grappa extrafina
✔️15ml Campari
✔️ 20ml Mancino vermouth bianco
✔️20ml Purple prickly pear liqueur
📍 Garnished with candied purple prickly pear

NEIGHBOURHOOD FORAGING x CAMPARI RED PASSION


Campari is a constant inspiration for me and for the bartending community, mixing traditions with passion & creativity.

I walked around my neighbourhood and that’s what I found:

Jasmine flower: Jasmine is a type of flowering plant that belongs to the family of olives. Most of them poisonous. Do not pick if not 100% sure.

Pineapple sage: from the sage family, this one has an incredible smell of fresh ripe pineapple.

Onion w**d: also known as honeybell grows in parks and has an incredible smell of garlic & onion.

Kawakawa berries: One of the most used botanical in Maori medicine. We used the berry of the female kawakawa to achieve spicy and herbaceous notes.

NEIGHBOURHOOD AMERICANO

* 30 ML of CAMPARI
* 30 ML of Onion w**d sweet vermouth
* Top with Neighbourhood Soda (made with Jasmine flowers, kawakawa berries & pineapple sage).

Stir down and garnished with kawakawa berries & Jasmine flowers.

NEIGHBOURHOOD FORAGING CANADA🌿


INGREDIENT

Oregon Grape is the fruit of the evergreen shrub called Mahonia Aquifolium. Named 'grape' due to its appearance, it's definitely not family, but can also be used to make wine. Due to the very high acidity of the berries, an unusually high amount of sugar is needed to make this wine palatable, but makes it excellent for aging.

The leaves are very similar to holly so be careful of the spikes when foraging. In spring you can recognize this plant because of their beautiful yellow flowers.

FORAGING

Oregon grape is a evergreen shrub growing up to about 1-3m in hight. Best is to find them on the forest edges or as undergrowth, often in Douglas Fir forests.

To find them you'll have to travel to the Western parts of North America. It's distributed from Alaska, through BC and California, down to Central New Mexico. We found these berries growing in abundance around Merrit, BC.

COCKTAIL

The high acidity of the Oregon Grape makes it an excellent base for a country wine. Fermented for 5 months, this wine comes out deep, crisp and dry, and is afterwords infused sous-vide with wormwood, cherry bark, cinchona, cinnamon, cardamom, gentian rosemary and bayleaf.

BOTANICAL

Besides their thorny reputation, the Bull Thistle is knowns as the royal Scottish symbol. Growing up to 1.5m height, they're often considered noxious or invasive, but most parts of this plant is useful and even edible!

Roots, young shoots and stems, leaves, chokes and seeds can be eaten if cooked the right way. Just be sure to remove the prickles!

FORAGING

Bull Thistle has a very wide range of environments to grow in, but in general prefers disturbed areas. Very common to find in urban areas, you can find plenty of them growing on roadsides, pastures, wood edges and fence lines.

Considered an invasive plant by many, it is best to make sure you make sure to look for thistles in places free of pesticides and herbicides.

Best to bring some gloves! 🧤

A Scottish inspired sipper bringing together the smokey notes of a blended Scotch and the vegetal notes of the Canadian Thistle hearts..

Choke Amaro made through infusion, using NGS, dried thistle and chokes, spices, demerara sugar.

NEIGHBOURHOOD FORAGING NEW ZEALAND.

WILD PINK JASMINE.

Jasminum polyanthum or commonly pink jasmine is a very common vine in NZ and is usually found on walls, wooden fences, phone poles or taking over abandoned houses on the side of the road.

Jasmine is a type of flowering plant that belongs to the family of olives. There are around 200 species of jasmine that can be found in warm, tropical areas around the world.

Unfortunately not all jasmine are edible, some of them very poisonous.

Spring and summer it’s the time when the flowers take over the streets with this sweet and perfumed scent.

If you are in doubt, do not pick it.

NEIGHBOURHOOD FORAGING NEW ZEALAND.

NEPTUNE’S NECKLACE.

Widespread throughout Auckland this seaw**d is characterised by strings of olive brown hollow beads.
The beads help the seaw**d float and stop it from drying out in the sun. Neptune’s necklace is native to New Zealand and Australia.
Neptune's necklace makes it's own food using the suns energy in a process called photosynthesis.

NEIGHBOURHOOD FORAGING CANADA🌿

Laetiporus is a genus of edible mushrooms growing in most of the world and is more commenly known as "chicken of the woods" or "sulphur shelf".

Loved for it's chicken-like texture when cooked, you can find plenty mycologists and foragers looking out for these to use in soups, fry-ups ,pastas, omelets, ... as an excellent meat substitute!

The flavour is described as lemony or citrussy with seafood notes like crab or lobster and we consider yourself very lucky to have found this nice and young specimen within Quebec!

COCKTAIL

Roasted like coffee, just as we did with our foraged dandelions, we used the roots of the chicory as a substitute for coffee to create a twist on a Espresso Martini. Deep in flavour, with crisper woody notes, this paired great with a Reposado Tequila from Don Julio.

NEIGHBOURHOOD FORAGING CANADA🌿


The berry season in Canada is in full swing and you can notice it when going out for a walk. Bright red, orange, blue and black fruits popping up on all the trees and shrubs. But one of them really catches the eye with their bright red fruits and beautiful purple or white flowers: Thimbleberries and Purpleflowering Raspberries.

We found a mixed cultivar between the Rubus Odoratus and the Rubus Parviflorus within the city of Montreal, and used it to make a bright cordial.

NEIGHBOURHOOD FORAGING NEW ZEALAND.

ALOE VERA FLOWER.

Aloe vera flowers have quite a few health benefits. The gel that oozes from the stems when they are snapped open is known to be a natural antibacterial substance. It also is a natural assist for a number of medical ailments.

Aloe plant blooms rise from an inflorescence which soars above the attractive rosettes. Only mature plants of at least 4 years of age will bloom, so if you see no flowers on Aloe plants, it may simply be due to the plant’s age.

The flower are still used in medicine, cosmetics and teas. Apparently helps fatigue as well as reducing depression and improves memory.

Inspired by my love for a good sherry wine, a fruity cobbler using Amontillado, elderflower liqueur and a homemade Thimbleberry cordial. Nice and dry, floral and fruity, it matches great with the profile of this amazing native fruit.
