Ginger Carrot Soup
Warm up with a vibrant blend of spicy ginger and sweet carrots in this immune-boosting plant-based soup that's bursting with flavor!
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 lb carrots, peeled and sliced
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
Directions:
1. In a large pot, heat olive oil over medium heat.
2. Add onion, garlic, and ginger. Sauté until fragrant.
3. Stir in carrots and cook for 5 minutes.
4. Pour in vegetable broth and bring to a boil.
5. Reduce heat, cover, and simmer for 20 minutes until carrots are tender.
6. Puree the soup using a blender until smooth.
7. Return the soup to the pot, add coconut milk, turmeric, cumin, salt, and pepper. Stir well.
8. Simmer for another 10 minutes.
9. Adjust seasoning if needed.
10. Serve hot, garnished with fresh cilantro.
