Let me share my all time favorite fall apple cookie recipe with you. So quick and sooo good!!! ππ - 1 cup of oats + half a cup whole wheat, spelt or barley flour + 1 tsp baking powder + 1 tsp cinnamon + pinch of salt + 2 tbsp melted butter or coconut oil + 1/4 cup maple syrup + 1 egg + a dash of vanilla + 1 or 2 apples cut in small dices. # # # Mix together the dry ingredients and the wet ingredients in separate bowls and then combine then. Put 2tbsp of dough on a lined baking sheet and bake for 15 min at 325 F or 165 C. Enjoy π

Have you ever noticed that some foods make you feel energized and nourished, while others make you feel tired, heavy or even bloated? If not, it's time to be more mindful, curious and experiment to determine which foods/food combinations make you feel your best. Maybe swap your usual coffee with a green or herbal tea or have a savoury breakfast instead of a sweet one. Or start a food diary, noting what you ate and how it makes you feel right after eating it and a several hours later and the next day. What is your energy level like, how is your mood, do you have any cravings? Personally, I noticed that I get an instant energy kick when I have a green smoothie with spirulina, spinach, lemon and a bit of apple in the summer, but in the winter I need a hot oatmeal with a baked apple and warming spices to feel happy. Also, I found that steel-cut oats (that are most closely related to the original, unprocessed oat groat) keep me satiated much longer than quick or rolled oats. Now I also know why: Steel-cut oats have a lower glycemic index than rolled or quick oats, meaning the body digests and absorbs them more slowly, leading to a slower rise in blood sugar, which leads to less cravings than when having
foods with a high glycemic index that cause more rapid spikes in blood sugar.
However, your body might react very differently to oats. You might be fine with quick oats or you might feel totally bloated, as food is very much bioindividual: One person's food can be another person's poison. That is why it is super important not to just follow the latest food trend, but tune into your body and keep asking: What foods makes me truly feel great and energized?
