19+ events. We host awesomely delicious wine and food events for private individuals, businesses, and charities that focus on the magic of exquisite wine and food pairings - our events are all about good wine, good food, good company. We have hosted corporate dinners, charity fundraisers, bridal showers, home dinner parties, restaurant dining events, holiday parties, picnics, summer patio tastings, and more that vary in size from intimate (for 6) to large scale (over 150). If you need advice on menu planning, a private chef, caterer, restaurant, or event venue, we can help with that as well. Wine Journeys events allow you to slow down, connect, and take in the moment through the delightful experience of wine and food. You don't know what you're missing unless you have experienced good wine, good food, good company! Coming from Irish roots, food was always a central part of life. My parents, ever embracing things Canadian, added a new tradition to our Sunday dinner - wine. This developed into an informal wine club in University, followed by a full blown passion on meeting others during my adult life who loved wine and food. It has finally culminated with my ongoing studies with the Wine and Spirits Educational Trust and this page. WSET Level 3 Wine Award with Distinction

With Thanksgiving approaching, I’ve been thinking about w**es that work particularly well with the traditional turkey dinner, and this Niagara Chardonnay came to mind.

Made exclusively from grapes grown in Cave Spring’s home vineyard on the Beamsville Bench, it comes from a site with a particularly distinctive terroir. The w**e has a definite Burgundian character, with rich flavours of yellow apple, nutmeg and vanilla, but the mineral backbone gives it a sense of place that is unmistakably Niagara’s Benchland.

The green apple finish adds a layer of freshness, which is one of the reasons I think it works so nicely with food. Other than turkey, I could see it working equally well with poached salmon, pasta with a cream sauce, or rich cheeses such as Camembert or Brie.

NIAGARA HARVEST — W**E WEDNESDAY

By mid-October, the vineyards of Niagara are well into their annual harvest, and we're bringing a little of that autumn feeling to Debut for an evening of local w**e, good food, and discovery.

Join W**e Journeys' Trent Mayers as we explore three Niagara w**es, with the actual w**es kept as a surprise. Choose any two of the three w**es to enjoy with your choice of appetizer from our tasting menu.

A relaxed evening, good conversation and a chance to discover some of the w**es being made right here in Ontario.

Wednesday, October 14 | 6:00–8:00 pm
$35 per person + HST
Includes your choice of 2 of 3 Niagara w**es + 1 appetizer.

Our esteemed Siamese Sommelier, Rian, has graciously granted his partner in w**e, Cian, a day off. 😁

Meanwhile, he is diligently assisting me in selecting the perfect w**e pairings for our upcoming dinner at Bacio Trattoria on Thursday, October 29. Mark your calendars and join us to discover our final selection. The menu, and tickets, will be unveiled later this week.

There’s something about this time of year that makes you want to get together. The leaves are changing, the evenings are getting cooler, and Thanksgiving is just around the corner. It seems like a good time to slow down for an evening, sit around a table with people you enjoy, and simply enjoy some good food and w**e.

That’s what I had in mind when I put together Around the Thanksgiving Table, the first evening in this fall’s Vineyards of the World series at Grillicious. We’ll taste three w**es from different parts of the world alongside two appetizers from Grillicious, with a few stories and discoveries along the way. The w**es will take us in three different directions, and part of the fun will be discovering something you may not have encountered before and seeing how it works with the food.

I’m not going to give everything away beforehand. There’s something more enjoyable about discovering a w**e in the glass rather than reading about it on a menu, and that sense of discovery is really part of what these evenings are about.

It would make a perfect date night, an evening out with friends, or simply a good excuse to get out and do something a little different on a Wednesday evening.

Wednesday, October 7 at 7:30 pm
$80.95 per person

Your ticket includes two appetizers and three w**es. HST is already included.

No w**e experience is necessary. Come hungry, curious, and ready to enjoy the evening.

I’d love to have you join me around the table.

If you’re putting out mixed appetizers, seafood, or roasted tomatoes with Parmigiano Reggiano this fall, this new sparkling rosé from Gérard Bertrand is well worth considering.

It’s made mostly from Chardonnay, with some Pinot Noir and Grenache Noir, and uses the Charmat method, which helps preserve the fruitiness of the grapes. I found fresh berries, red apple and mineral notes, followed by a bright, lemony finish.

It’s a very good accompaniment to many apps. I particularly like the idea of it with a charcuterie and cheese board.

The Siamese Somms are pitching in to help me choose the w**es for our Vineyards of the World experience.

They’ve been surprisingly opinionated. One insists on Burgundy. The other appears to have developed a rather strong preference for New Zealand.

I may have to overrule them.

But they do have the right idea about one thing: w**e is a great way to travel without leaving the table.

Our Vineyards of the World experience takes us to different w**e regions, tasting the w**es, talking about what makes each place unique, and pairing them with some great food along the way.

It’s relaxed, social, and designed for people who enjoy discovering w**e without needing to know everything about it beforehand.

So, if you’re ready to do a little travelling by the glass, join us for Vineyards of the World.
