#ইলিশের_পানিখোলা

এটি উওরাঞ্চলের একটি আঞ্চলিক রান্না। ইলিশ আমাদের জাতীয় মাছ আর এই মাছ আমরা কম বেশি সবাই পছন্দ করে থাকি। যদিও ইলিশ মাছ বিভিন্ন ভাবে বিভিন্ন রেসিপিতে রান্না করা যায় তবে আমার কাছে মনে হয় ইলিশের সম্পূর্ণ স্বাদ এবং ঘ্রান পেতে হলে এই রেসিপিটি একটি অথেন্টিক এবং পারফেক্ট রেসিপি।
খুবই সিম্পল জাস্ট পেঁয়াজ কুচি করে কাচাঁমরিচ ফালি করে কড়াইতে নিয়ে স্বাদ মত লবণ দিয়ে একটু কচলিয়ে সাথে ১টেবিল চামচ সরিষার তেল অথবা সয়াবিন তেল দিয়ে পরিমাণ মত পানি দিয়ে ইলিশ মাছের টুকরো গুলো বিছিয়ে দিয়ে ঢাকনা দিয়ে ভালো করে ঢেকে ১০-১২ মিনিট জ্বাল করলেই রান্না হয়ে গেলো ইলিশের পানিখোলা। গরম গরম সাদা ভাতের সাথে খেতে দারুণ মজার। 😋
