Everyone comes for the gnocchi. It's the butter that gets them.

You start with cream and a jar, and about ten minutes of shaking. Then it splits, and you're holding butter you made yourself. That's the butter your gnocchi gets dressed in later.

Then the gnocchi, and the bit nobody tells you: it's all in the hands. Work the dough too hard and you get bullets. We'll show you how much flour is enough, how it should feel under your palms, and how to roll, cut and ridge each piece so the sauce has something to hold on to.

Yours goes in the pot and comes up when it floats, then into the pan with your own butter cooked to a nutty brown and sage crisped in the foam. Two minutes, three ingredients, the best thing you'll eat all week.

Then we all sit down at the long table and eat it while it's still hot, with a glass of something local.
