Welcome to my world, this is my short story;
It begins nearly twenty years ago in Pretoria, South Africa, where I started working as a waiter and soon fell in love with the Cocktail & Flair side of bartending and by 2002 I had entered and won my first competition. I worked hard, had the pleasure of being head bartender in 80% of the bars ive worked since 1997 and I entered endless competitions to

Mocktail X Fragrance pairing sensory experience.

Well that was an incredible experience and creative adventure to pair mocktails to fragrance in MECCA’s Bar Perfumery.

Combining my cocktail and flair skills to create this unique session was amazing from working with the team and staff each day, the passion and professionalism from all staff was inviting and made each day a huge success and a smooth operation.

Big thanks to all the perfume specialists who worked with me each day and the cafe staff who allowed me to take over some of their space throughout the activation.

Pairing Menu:

DS & Durga - Debaser in Bloom
Matched to a Coconut, rosemary & musk syrup mixed with lemon juice and served with a paired cocktail mist spritz.

Perfumer H - Rose with insect
Matched to a Red rose & Vanilla syrup mixed with lime juice and served with a Rose & Thyme cocktail mist spritz.

Arpa - Recedere
Matched to a Star Anise, orange & musk syrup mixed with lemon juice and served with a paired cocktail mist spritz.

Born to Stand Out - Drunk Lovers
Matched to a Spiced pineapple syrup mixed with lime juice and served with a pineapple, star anise & cinnamon cocktail mist spritz.

Each mocktail was stirred down with liquid nitrogen, arriving in a cloud of theatre before revealing its final form. Every serve featured a unique sensory moment, inviting guests to first taste the drink while experiencing its paired fragrance in isolation. Then, with a delicate mist layered over the top, the profile transformed in real time unlocking new notes, shifting perception, and blurring the line between what’s tasted and what’s sensed.
A quiet bit of alchemy… where flavour and fragrance don’t just meet, they evolve.

Overall view of the project:

14 days
7 sessions per day
4 pax per session
16 mocktails
112 mocktails per day
1568 mocktails
20L liquid nitrogen
25L soda

Extra special thanks to for the eye catching videos:)
