Lactation cookies season is back!
Here’s what you’ll need:
INGREDIENTS
3 cups old-fashioned rolled oats
1 1/2 cups unbleached organic all-purpose flour
5 tablespoons brewers yeast
3 tablespoons ground flaxseed
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
12 tablespoons organic unsalted butter
4 tablespoons unrefined organic virgin coconut oil
1 1/2 cups organic cane sugar
1 large egg + 1 large egg yolk
2 teaspoons vanilla extract
1 1/2 cups dark chocolate chips/chunks, I like ghirardelli
feel free to add: unsweetened flaked coconut chopped almonds, 1 to 2 tablespoons of almond butter
Mix it all together
10min in the oven @ 170 degrees
Et voilà!

Found this super quick breakfast recently and I can say is one of the best instant overnight oats that I had.
It’s perfect to have in the suitcase for an express breakfast if don’t feel like having a full breakfast and still eat healthy.
I found Prana Organic•bio in Canada but I believe you can find them elsewhere.

- PORTUGUESE TABLE -
If you know someone from Portugal then you’ll certainly know that Bacalhau is one of our main dishes.
With over a 100 different recipes, BACALHAU À GOMES DE SÁ is one of my favorite. Not only because is the easiest but mainly because is one of the healthiest!
A glass of red or green wine is also a great choice to complement the meal. And as we (Portuguese) say: “a glass of wine a day keeps the doctor away” 🍷😎

- THE BEST BANANA BREAD -
Banana bread is one of my favorite healthy treats. It’s perfect either in the morning with a coffee or in the afternoon with a cup of tea.
There are so many versions and recipes of Banana bread out there, but when it comes to the perfect combination of healthy, tasty, sweet, soft and rich in nutrients it’s very difficult to find THE ONE.
