1️⃣If you were to start your career as a pastry chef now, where would you start?

💬I would do the same thing I did 10 years ago - I would go to pastry school, pay 15,000 euros and do three months of training to get a solid foundation that would set me free.

The second thing I did was just watch videos, forums, read articles and gather all the information I could find online.

But basically I would start with the training. Before I went to pastry school, I worked as a cook for three years. During that time, I got my first taste of pastry, making my first cakes in a pastry shop, where I came in and offered a deal: I will help you and you will teach me how to do it properly.

2️⃣What challenges did you face at the beginning of your journey and how did you overcome them?

💬All difficulties come from a lack of knowledge. Here you have a choice. Either you have a painful experience, which will be long and costly: you’ll spend time and money finding the right ingredients and their combinations.

Or you can pay for your education. In this case, you learn all the basics quickly and don’t waste money on bad ingredients.

3️⃣What is your professional goal now? What are you striving for?

💬I’ve attended many training programmes over the years, and now I see that what they have in common is their inefficiency.

Therefore, my global goal is to improve the quality of education for pastry chefs.

I strive to make all courses accessible, effective and understandable so that everyone can afford them, see and practice all the nuances of dessert preparation and achieve a wow result - making delicious and beautiful desserts.

4️⃣A piece of advice for those who dream of opening their own patisserie but are afraid.

💬Any fear speaks of ignorance. So my advice to those who want to open a patisserie and are afraid is to learn how to do it right.

Opening a patisserie is not the same as being a pastry chef. You’re not just cooking, you’re creating a business. You have to learn that too.

How to make almond-cocoa dragee in 6 steps?

«Almond-cocoa» are the perfect combination of tender almonds and bitter chocolate, melting in your mouth. And we know how to make it right at your home.

Ready? Let’s get started!

You will need:

☑️ Sugar - 300 g.

☑️ Water - 130 g.

☑️ Almonds - 1000 g.

☑️ Cocoa butter - 30 g.

Caramelize the almonds:

1️⃣ Put almonds in the oven at 160°C for 8-10 minutes.

2️⃣ Cook water and sugar until light yellow caramel color.

3️⃣ Put hot nuts into caramel and caramelize on medium heat.

4️⃣ Add cocoa butter and mix.

Just a little bit more, we’re almost there!

5️⃣ Add 15 g of 40% alcohol or sugar syrup and mix with nuts.

6️⃣ Add 300 g of cocoa powder.

📍 Buy products in bulk: the less quantity of goods, the more you overpay. Or try to change the supplier.

For example, you raised prices on certain positions, and you have literally a few less customers, or the number of customers hasn’t changed. So you definitely need to keep the new price💸

In some pastries/desserts, you can reduce the amount of a certain product without losing quality. For example, ganache contains cocoa butter, BUT if its amount is reduced, there will be no major changes and the result will be the same😉

Friends, today we will tell you the story of the creation of the LANDBOX school🤫

It all started back in 2020...
Yes, that same covid became our starting point.

At that time, we were still holding live master classes, but covid had other plans for us and we were forced to suspend our activities😓

By that time, the idea of creating an online course had been sitting with us for a long time, but we kept putting it off.

But there was nowhere else to put it off, and we decided to act🤜

Our team decided not to create another online school, university, or streaming platform. Instead, we created an “ONLINE BOX”.

Drawing on 8 years of experience in the confectionery industry, covering the educational sphere and practical work at various confectionery and bakery enterprises, our team developed an online course on dragées😌

All summer we worked on branding and website design. And on August 18, we launched the course!!!
