BLACK FOREST TRIFLE

This Eid Al Fitr let's give the Classic Black Forest Cake a twist !!! Make this super easy and delicious Trifle and you will simply love it πŸ’•

Ingredients:-

β€’ Brownie - tray of homemade or store bought ones

β€’ Pudding - packet chocolate pudding mix or homemade chocolate custard

β€’ Cream - 2 cups, whipped

β€’ Cherry Pie Filling - 1 tin or you can make your own filling using frozen cherries

β€’ Cherry Juice - 1 cup

β€’ Chocolate Flakes - to garnish

β€’ Fresh/Canned Cherries - to garnish

Method:-

β€’ Take the brownies and slice into cubes or crumble, keep aside.

β€’ Make chocolate pudding and allow it to cool

β€’ Make cherry pie filling if you aren't using the store bought one.

β€’ Whip the cream nicely, keep aside.

β€’ Assemble the layers now,
starting with the Brownie layer drizzle with Cherry Juice followed by the CHOCOLATE PUDDING, then the CHERRY PIE FILLING and then with WHIPPED CREAM - REPEAT until the top of the serving bowl/dish

β€’ Chill for at least 1 hour or overnight

β€’ Garnish before serving with Chocolate Flakes and Cherries.

β€’ Serve chilled.

Cook's Note:-

β€’ You can replace the brownies with chocolate cake if you like.
β€’ Cherry juice can be substituted with Cranberry, Pomegranate or any tart fruit juice.
β€’ Cherry pie filling is best for this recipe, however you can simply make your own filling using canned or frozen cherries.
β€’ Since it's Black Forest Trifle hence I prefer chocolate pudding or custard instead of Vanilla, if you don't have any then simply flavour your Vanilla custard with chocolate.
β€’ Try to use transparent Trifle bowls or individual glasses as the layers look are visible on the outside and look gorgeous!

KFC STYLE BOXING CHICKEN

This Ramadan you can recreate KFC style fried chicken at home with this recipe !!

Ingredients:-

Chicken Drummets - 1 kg
Vegetable Oil - for frying

Dry Mixture:

All-purpose Flour - 2 cups
Cornflour - ΒΌ cup
Baking Powder - Β½ tsp
Salt - to taste
Oregano - β…“ tbsp
Crushed Black Pepper - 1 tsp
Mustard Powder - 1 tsp
Paprika - 4 tsp
Garlic Powder /Salt - 1 tsp
Thyme - Β½ tsp
White Pepper Powder - 1 tsp
Basil - Β½ tsp
Ginger Powder - 1 tsp

Wet Batter:

Buttermilk - 2 cups
Salt - to taste
Oregano - β…“ tbsp
Crushed Black Pepper - 1 tsp
Mustard Powder - 1 tsp
Paprika - 4 tsp
Garlic Powder /Salt - 1 tsp
Thyme - Β½ tsp
White Pepper Powder - 1 tsp
Basil - Β½ tsp
Ginger Powder - 1 tsp

Method:-
Place the chicken pieces in the buttermilk wet mixture and refrigerate overnight or atleast 2 to 3 hours for best results.

Prepare the dry mixture by adding all the spices in the flour.

Remove the chicken from the buttermilk and shake off excess. Put each chicken piece into the flour mixture, turn to fully coat, then shake off excess flour. Let the breaded chicken rest for 15 minutes before frying over a wire rack or baking tray.

Fry the chicken in batches until done, drain the fried chicken on a clean wire cooling rack on top of a baking sheet. Serve hot with your choice of sauce or dip.

Cook's Note:-

You can make buttermilk at home by adding 2 to 3 tbsp of vinegar to 2 cups of milk, let it stand for 10 minutes till it curdles, your buttermilk is ready!
Pat dry the chicken pieces well enough so that the buttermilk is not dripping when you coat them.
For crispy, Kentucky fried boxing chicken , make sure to remove any excess flour by shaking it off. However coat the chicken evenly and completely on every side.
You can use any piece of chicken, if you don't have chicken drummets available.

If you can't find garlic salt you can use garlic powder.

For best taste, soak the chicken pieces in buttermilk as long as you can in the refrigerator for upto 24 hours max.

BATAIR YAKHNI (Quail Broth)

A perfect treat this Winnters !!!!
Batair yakhni or Quail broth is literally soup for the soul. It is super simple to make and extremely comforting, highly nutritious and delicious.

Ingredients:-

Cooking Oil - 1 tbsp
Quails - 2 whole, washed & cleaned
Onion - 1 whole, peeled & halved
Garlic - 4 to 6 cloves
Ginger - small piece, peeled
Water - 1 to 1Β½ litres or as required
Fennel - Β½ tsp
White Cumin - Β½ tsp
Coriander Seeds - Β½ tsp
Salt - to taste
Bay Leaf - 2
Black Peppercorns - 5 to 6
Green Cardamom - 2
Black Pepper Powder - as required

Method:-

In a pot heat oil and add the two whole quails along with onion, ginger & garlic. Mix well & keep stirring until the quails change their color. When done, add water along with salt & dry spices. Cover & cook on medium flame until 12 to 15 minutes or until cooked.
Remove lid & strain the yakhni to remove whole spices & vegetables. Pour in serving bowl & sprinkle black pepper powder on top, serve hot.

Cook's Note;-
It tastes best when made the same day of serving. You can add sliced boiled eggs or add a dash of lemon juice to the yakhni when serving.
