Although the satay of Thailand has become most popular in the West because they have a larger representation here, Satay actually originated in Indonesia.
Satay is simply grilled meat with a sauce, so that takes on many interpretations throughout Southeast Asia.

The Malaysian version starts with a fabulous marinade and brushing the meat as it's grilling with lemongrass oil makes all the difference.
The sauce though is the main difference. There is no coconut milk in the Malay version Instead, it is a mix of peanuts, lemongrass, chillies, shallots and other spices and aromatics.
