I love herbs, gardening and foraging. I think it's wonderful that so many people are learning and enjoying the joys of wild harvesting as well. We do have a number of plants that are at risk of over harvesting.

We love vacation and travel! However, nobody wants to be sick while they are hiking in the mountains or exploring a new country. Drupes or stone fruits come available from late May and early June through the first frosts of September in Idaho. They are easy to identify as they all have a large hard pit in the center. Cherries, apricots, plums, nectarines and peaches…oh, my. They are lovely to eat fresh by themselves or to use desserts, jams, sauces and jellies. And, yes, they lend themselves well to savory dishes like meat sauces and salsas. The recipe is a nice blend of some firm fleshed drupes and some fast softening apricots that needed used.

Stone Fruit Salsa
.
2 lbs mixed drupes (stone fruits) I used cherries, plums, apricots, peaches and nectarines
1/2 cup lime juice
1/2 small red onion finely minced
2-3 Tbsp minced cilantro
sea salt
organic sugar optional
.
Clean and pit and coarsely chop the fruit. I had 2 apricots that were very soft, and they were more a mash. In a medium bowl, combine fruit with lime juice and cilantro and mix gently. Add salt to taste. Add sugar 1 tsp at a time if the fruits are sour. I often don't have to add sugar. This recipe can easily be modified with 1/2 a cup of red bell pepper. I omitted it this time as the pepper flavor wasn't going to match the rest of dinner's flavor.
This salsa can be canned. Have an over abundance of fruit that needs used up? Save this salsa for later. Fill hot salsa into hot jars, leaving ½ inch of headspace. Remove air bubbles (I tap the jars and use a knife or chop stick to poke out bubbles) and adjust headspace, if needed. Wipe rims of jars with a dampened, clean paper towel. Adjust lids. Process pint jars in a boiling water bath for 15 minutes.

Recipe highlights and energetics: Cherries, peaches, plums, apricots and nectarines all nourish Yin and moisten fluids. Their sweet nature lends them to Earth element. The lime is sour and astringes, helping to keep excess sweet in place. Onions are pungent, drain phlegm and benefit the digestion.

Summer, the season of the Fire Element, has arrived.

The days are long and the bright sunshine invites us outdoors to work in our gardens or play in the sun. It’s a season of activity and joy. All seasons represent the possibility for change in our lives. We can fight their energetic nature or we can use the season’s blessings for our own growth and benefit…and summer has so much to offer.

Why the seasons matter -
In the 5 Element Theory each season (Spring, Summer, Late Summer, Autumn and Winter) possess their own energetic dynamics and movement of Qi (energy). They ebb and flow from one to another. Understanding the energetic nature of each season helps us to adapt so we move gracefully from phase to another. For example– knowing that Spring’s climate is wind, helps those that are susceptible to wind conditions such as epilepsy, headaches, anger, and allergies to take appropriate precautions to not be as easily affected by the condition. Winter, encourages us to rest and be introspective, to consider our deepest selves–whereas, Summer invites us to expand and be active. We need not hunker down or fear each season, rather having awareness can help us become flexible and adaptive, we can embrace and benefit from the virtue and blessings each season rather than fight them.

Cucumbers are perfect for handling summer’s heat. This is a classic Japanese summer salad of cucumbers in vinegar with numerous variations. Make it up about about an hour before so the flavors have some time to blend. The flavor is even better after a day or two as they pickle a little more. Enjoy!

Cucumber Salad With Seaweed And Sesame
.
Ingredients
1 large cucumber cut in to 1/2 inch quarters
1-2 Tbsp rice wine vinegar
1 Tbsp nori or light seaweed crumbled
1/2 Tbsp sesame seeds black or white
1-2 Tbsp water
dash organic cane sugar only if you need it
.
Slice and quarter the cucumber to desired bit sizes. In a medium bowl, combine vinegar, water, seaweed, seeds and sugar. Pour over cucumbers until thoroughly coated. Serve chilled.

Energetics: This recipes is cooling and yin nourishing overall. Cucumbers are high in vitamins and cool heat conditions. Seaweed softens hard masses and nourishes yin.

I have considerable knowledge of corn and it's made me a bit of a corn snob - and I want to see healthy, happy corn back in our lives and on our dinner plates.
.
The corn we have today is far changed from the maize that Native Americans grew. In fact, it is so changed that it really can't survive without the help of humans - unlike potatoes or squash that are nearly impossible to stop from growing.
.
We believe corn to be about 7000 years old. It originated in Mexico from a grass called teosinte. Teosinte was a spindly little plant and the kernels on the ears were uneven in size and rows. It quickly spread throughout North and South America and was know as maize by many of the Native Americas. Europeans wouldn't get to enjoy corn until the time of Columbus and other "discoverers" in the 17th centuries.
.
Today, corn is one of the most genetically modified foods, it's been heavily sprayed with pesticides. It's fallen prey to bio-piracy - the process of developing seeds that terminate or control of a seed by a company or entity making it impossible for farmers to replant their own seeds. It's heavily subsidized and grown, in some cases, for all the wrong reasons.
.
When corn is fresh it is considered a vegetable, when dried it falls into the grains category. Corn is relatively high in fiber which aids in weight control, colon health, and the regulation cholesterol and blood sugar. Corn has ample amounts of vitamins B, C and magnesium.
.
In Asian food energetics, corn is neutral and has a sweet flavor making it a part of the Earth Element. Corn and cornsilk are diuretic and drains damp it regulates water - it's fantastic for treating edema.
.
Corn regulates digestion and stimulates the appetite.
It nourishes the Heart and calms the Shen - It's a truly happy food. Corn nourishes and protects the physical heart and calms the mind so it benefits anxious and nervous people.
Truly it should be a food that we bring back in an organic and heirloom forms.

It's Amma time!
I am settling into my new space and routine nicely.

I am still practicing with Covid precautions and will remain masked for the time being, especially as I work in a small space, in close contact with others.
.
While I recognize and can appreciate the choice to not vaccinate, for now I believe it is safest for my family, clients and community that I refrain from treating those who are not vaccinated until we have a greater level of safety in the community. I am happy to discuss this with you individually and consider individual situations - such as those who cannot vaccinate due to auto-immune disorders. Please contact me via phone or email me.

I have a new therapy space in Oak Tree Wellness on Americana by Kathryn Albertson's park - 3350 Americana Blvd, Suite 210A Room 25 to be precise).

Just little old me, in a comfy, quiet space, where other healthcare practitioners also rent. Their waiting rooms are not open at this time, so I will meet you at the door and escort you in to the room. The space is a wee bit of a maze so this is best for all of us until we settle in.

I am not offering 1 1/2 appointments at this time to give more space to get folks in. Watch for those to return in July.

As always, I will stay abreast of current infection levels, variant spread and tendencies, as well as, preventative and post Covid treatments both in Chinese medicine and western protocols.

I am an AOBTA certified instructor and practitioner of Asian Bodywork (Amma Therapy). I have been practicing and teaching Asian medicine in form of Traditional and Contemporary Chinese medicine and holistic nutrition since 1993. I place my emphasis on helping clients and students understand their core health patterns and help them learn to apply lifestyle principles to maintain health or treat specific disharmonies.
