A few weeks back, our neighborhood witnessed the pruning of an almond tree, blanketing the ground with vibrant green almonds. Intrigued, we gathered a few and delved into researching their health benefits. To our surprise, we discovered that every part of the almond, including the pods, is edible and offers numerous health benefits. Despite the scarcity of almond recipes, suggestions pointed towards consuming them raw or incorporating them into salads. However, my aim was to preserve their freshness, leading me to sauté a portion and steam the rest to craft a spicy pickle. The results were delightful; both the stir-fry and pickle retained the almonds' satisfying crunch and added a delightful sourness to our meals. We continue to relish this homemade pickle with every meal, savoring its unique flavors.
