Prep for my zoom cooking class yesterday. Still low on the tech score but making progress. On the menu seared mahi-mahi(I used cod), roasted Brussels sprouts and cauliflower and herbed quinoa. Delicious!

What to do with plantains? I have tasted commercial plantain chips from the grocery store and enjoyed them, and so I said to myself, let’s give it a try making them at home especially since the commercial varieties are often made with undesirable oils.
Although plantains are from the banana family of plants, they are usually treated and prepared like a vegetable. They are often compared to potatoes because of their starchy flavor. They range in color from green to yellow to black depending upon their ripeness. Green plantains are a bit hard to peel but they are your best choice when your preparing plantain chips.

Tandoori Chicken is named for the cylindrical clay oven called a tandoor, which was traditionally prepared over hot coals. Although the classic recipe wasn’t popularized until the 1940s, remains of what resembled the tandoor oven and charred chicken bones have been found dating back to 3000 BC.
Most of us don’t have tandoors, but we can still prepare a great tasting and beautifully red-orange Tandoori Chicken either in an oven or on a grill. I love this dish as an appetizer prepared on short wooden skewers, but it’s also a great entree served over brown rice or with Naan to soak up the flavorful sauce!

But alas, being unable to find ripe bananas, he came back with plantains. This recipe was originally Plantain stew, but I added shrimp in place of plantains! Have you ever heard of Puttanesca sauce?
Traditional Puttanesca sauce originated in Naples, Italy. It is a very flavorful combination of olive oil, black olives, capers, garlic, chili pepper, oregano, tomatoes and fresh parsley. I’ve added red lentils to this Puttanesca pasta recipe because I LOVE to add veggies wherever I can, and this veggie (which is technically a legume) is loaded with protein, so it helps to round out the nutritional profile of the meal. It’s also vegan and gluten free if you choose gluten free pasta!
