Made your recipe for that incredibly elastic and puffy and perfect pita bread yesterday. You’re right, I’ve never had pita bread that good and functional! It doesn’t tear apart, even when stuffed full of gyro fixings and you take a big ol’ bite. Color me impressed. I will say, the semolina flour mouthfeel was probably a little off-putting to me, and I liked the ones better that I had lying on a kitchen towel prior to cooking. But my main dilemma is this: we are a two person household and now I have ten pieces of perfect pita that won’t be perfect much longer! How do I freeze them without compromising their loft and integrity?

The Softest Pita Pocket Recipe: The Oven Method

Greek-Style Shepherd’s Pie w/Briam

Shepherd’s pie is classic comfort food. What’s not to love about the layer of veggies, meat sauce, and luscious mashed potatoes? SO delicious! I added a Greek twist by swapping out the classic carrots, peas, and corn (actually, I kept the corn) with Briam, Greek Ratatouille. I also added some feta cheese and we fell in love with this dish. Gone in minutes! Follow my easy tutorial and I highly recommend that you make a double batch for the freezer.

I showed you how to make pita pockets on the stovetop and looked at all of the comments and questions and decided to also share the same recipe but, made in the oven. I also snuck in a "how not to make the pitas" part in the video...lol! You ask, and I come back with as many answers as I possible can ;)

I’m over here doing what I do: recipe testing and today, I’m trying another spanakopita recipe that I literally dreamt of. I know! It’s what happens when you’re cooking food, writing about food, editing food photos, you get where I’m going with this...

So, I combined spinach pie filling and one of my favorite homemade pastry doughs: Kourou dough. I used it to make my chicken turnovers, which by the way, you’re missing out if you have not tried yet. Just sayin!

It’s smelling incredible over here! I will keep you posted 😊 I’m testing out a few different ways to make this deliciousness: stay tuned...

Kibbeh, an oval-shaped meatball, is made with bulgur wheat, ground meat, and lots of herbs and is a very popular Lebanese dish. The first time that I had it was when my friend, Nadia (from Lebanon) made it for my family. The kibbeh was deep fried then served with a creamy tahini sauce and was absolutely delicious! Freeze that garlic!! Costco Wholesale U.S.A

I use tons of garlic in my food (as you might have already noticed 😂) and ain’t nobody got no extra time to peel it so, I buy the big huge container at Costco.
But, that’s a little too much for even for me. And, lemme tell you, Mamma cooks all the time! Haha!

To make it last longer, I freeze it. I’ll post a short tutorial very soon. For now, here are some pics 🙂
