I know it tough to keep the consistency of school while at home with the kids, but there are so many cooking activities that incorporate Math, Science, and also Reading. Here is an easy one to do with kids and make a healthy meal at the same time. This recipe was shared with me today by my friend Lillie Hoover:

Good morning! Read the last line. I hope you'll learning something and maybe giggle.

Social distancing doesn't equal boring, flavorless and unhealthy food!

Crockpot Chicken Fajitas:(10 minute prep)
Serves: 4
1 pkg. taco seasoning mix
2 pkg. fajita seasoning mix
4 boneless chicken breasts
3 red, yellow, orange, green bell peppers, sliced (use what is available)
1 onion, sliced
1/2 lime or sq**rt of lime juice (any citrus)

Serve on tortillas or make a bowl with canned beans and rice.
Toppings: cheese, sour cream, greek yogurt, salsa, avocado, chips

Put seasoning mixes in a shallow pie pan. If you can't find the mixes, google and you could put together some chili powder, garlic, cumin, paprika etc..

Pat chicken dry. Coat chicken liberally on all sides with the seasonings and lay it in the crockpot. Top with your sliced veggies. No water or broth needed! Put the lid on and cook on low for 6 hours or until it reaches 165 degrees internally. I did high for 3 hours. Remove the chicken, let it rest covered for about 10 minutes..Those proteins must settle down! Meanwhile, you will have a crockpot of deliciousness. Squeeze the lime into the crockpot mixture, slice the chicken and add it back to the crockpot. Serve!

*As always, if you have "planned overs", refrigerate your food within 2 hours and reheat your food to 165 degrees for safe consumption!

If we prepare and store food correctly, we won't have to use the toilet paper!😉😉
