We are excited to spread Wellness to all in the new year and beyond. Chef Kevin is constantly adding new ingredients to his repertoire, In addition to over twenty new recipes.
Introducing New Ingredients to your Healthy Pantry, for example;
• Farro - An ancient grain with a nutty flavor. Minimally processed and dense nutrition. With seven grams of protein it is even higher than quinoa. Also it's low in gluten and has a very short cook time of 6-8 minutes.
• Coconut Sugar - This sugar has a low glycemic index and is also a nutrient powerhouse. Filled with amino acids, vitamin C and B.
• Asian Black Rice - Another high protein, ( 6 grams) but low gluten grain. Excellent texture and an alluring color.
• Coconut Oil - An aromatic fat with a high smoke point that makes it great for sautéing just about anything. It leaves very little trace of coconut flavor in food. Although high in saturated fats it is excellent for heart health and treating high cholesterol and high blood pressure. Also it is excellent for strengthening the immune system!

Ok, it's the Holiday Season, have we had our fill of sugary sweets yet? Of course not. Let's talk about sugar and keep it easy to understand. Most people consume way more than the recommended daily allowance and probably don't realize it. I said probably. Our recommended daily allowance is 9 teaspoons of added sugar for a man and 7 for a woman. That's roughly one soda a day. I have always said, Healthy comes from the common sense we are born with. It's not the sweetener as much as it is the mass consumption of it. Read Labels, Focus on Fresh and Avoid Processed when ever possible. Your body will let you know just how much of a good thing this can be.
Yesterday I bought the last Bell & Evans Turkey at the local Giant. I can't wait to see how this trend pans out. I have seen these Turkeys being raised and their also Local. Lancaster PA!
Ok, how many of us Still have that throat scratching, oh so sweet, Sweet Potato Casserole? You know the ones with the marshmallows and all that sugar? Does a Sweet Potato really need to be any sweeter? Try this recipe;
Chili Roasted Sweet Potato Salad
For the sweet potatoes;
2 Lbs. Sweet potatoes, peeled and cut into large 2” dice
1/4c Extra Virgin Olive Oil
1/2 t Ground Chipotle Powder
3T Paprika
1T Sea Salt
Pre-heat your oven to 450 degrees.
Mix the chipotle powder, paprika and salt and reserve.
Toss the sweet potatoes in the extra virgin olive oil. Spread evenly on a sheet pan, and sprinkle with the spice mixture.
Roast for 15 to 20 minutes until the sweet potatoes are lightly browned, and firm but fork tender. Cool to room temperature.
For the salad ;
1 ea. Red pepper, pan roasted
1 bu. Green Onions, cut 2” long and pan roasted.
For the dressing;
1/4 c Clover Honey
1/4 c Cider Vinegar
2T Lemon Juice
2 T Extra Virgin Olive Oil
Tt Sea Salt & Black Pepper
combine all ingredients and toss with the sweet potatoes, roasted peppers & onions .
*note—to roast the peppers & onions heat a skillet to the smoking point with one t extra virgin olive oil. Sear the peppers & onions on one side to brown and remove.
The best surprise while shopping at Giant Foods! Bell & Evans All Natural, Vegetarian Fed, No Antibiotics or Hormones Turkey. This is such an excellent sign! It means that they are testing the market to see what choices we will make. Any one knows money talks, so make a good choice this Holiday and maybe we can all impact a change.
I have sold thousands of pounds of this product and I stand by it.
Thanksgiving is next week. There are so many better options to our Thanksgiving Turkey than the ones in conventional grocery stores. Yes they may be a bit more expensive, but for even the most expensive one, The organic, gmo free, antibiotic free, hormone free bird you end up spending only $6.00 a person. That is 1 1/2 lbs of bird per person. Plenty for left overs. You can't compare that price to a hormone-antibiotic bird. They keep those cheap and the reasons are obvious. Healthy Eating is all about choice, the more we make them, the more choices there will be.
Winter is definitely here. Try a kicked up comfort food this weekend and share it with friends!
Badlands Turkey Chili
1T Olive Oil
1 lb Ground Turkey
1 ea. Med. Onion, 1/4” diced
3T Tomato Paste
2T Garlic Chopped
1t Chipotle Adobo Puree
1c. Black Beans
1c Red Kidney Beans
2 c Diced Tomatoes with juice
2 c Chicken Broth
2 ea. Roasted Corn
2T Chili Powder
1T Cumin Powder
1t Paprika
Tt Tabasco
1T Worcestershire Sauce
4 ea. Chopped Green Onions
In a 1 gallon soup pot sear the ground turkey in the olive oil for three to five minutes.
Add the onions and cook for two minutes.
Add the garlic and the tomato paste, chili powder, cumin and paprika and cook for two more minutes.
Add the chipotle, both beans, diced tomatoes, chicken broth, and corn and simmer for 20 minutes, until the turkey is tender.
Finish the chili with the Tabasco, worcestershire, and top with the green onions.
*note for roasted corn coat the shucked corn with 1t extra virgin olive oil and roast at 450 degrees in your oven, or grill until lightly browned .)
Here is the Health Tip of the Day from Chef Kevin. Avoid all processed sweeteners except for stevia. Although there are better choices. Stevia has nothing to offer except for the simulated and temporary sweetness on the palate. Alternatives like Local Raw Honey and Agave Syrup are packed with Anti Oxidants and are not refined cane syrup but naturally harvested. Build your pantry to include healthful ingredients and enjoy the rewards.
