Today, students in Mrs. Edmond's classes at Annie Camp Junior High were visited by EFNEP Program Assistant Kim Huffman, with Craighead County Extension. She taught the importance of eating a healthy breakfast and what that should look like. A healthy breakfast should include 3 of the 5 food groups (Dairy, Protein, Grains, Dairy, Vegetables). The students then made a breakfast of scrambled eggs and whole grain blueberry pancakes in their cooking labs.

Food safety in the kitchen is very important. One thing you may not think about is washing your can tops before opening them. Bacteria and germs can live on can tops and go undetected. Many hands touch the cans from the factory, shipping, wearhouse, shelf stocking person to customers in the store. Once you attach the can opener and put a hole in the can cross contamination can happen if the top is not properly washed off. What may be on the top of the can be potentially transferred inside the can. A quick rinse and wipe with a wet paper towel is important to cooking food safely. Jonesboro Code Enforcement spoke to them about property maintenance and some of the rules as a homeowner in the city.

Kim taught Eating Smart, Being Active lessons which included healthy cooking, food/kitchen safety and nutrition education. She also did a 3-Can Chili and Baked Tortilla Chips food demonstration. It received a πŸ‘!

Meet one of Craighead County EFNEP Program Assistants, Kim Huffman. Kim has been with EFNEP for 4 years. She teaches basic cooking, food and nutrition classes to low resource families. Covid-19 presented some major challenges reaching those that EFNEP serves. But through proper social distancing, technology, online programming, mail out & phone lessons and video conferencing, Kim was able to successfully complete her job duties, and met her youth and adult participant goals! She was also recognized as the Arkansas EFNEP Educator of the Year in 2020 for her hard work and dedication!
