BAKED ARTICHOKE DIP**
16 servings (about 3 tablespoons each)
1 can (15 ounces) artichoke hearts, rinsed, drained
ยฝ package (8-ounce size) fat-free cream cheese, softened
ยฝ cup EACH: grated fat-free Parmesan cheese
fat-free mayonnaise
fat-free sour cream
1-2 teaspoons lemon juice
1 green onion, thinly sliced
2 teaspoons minced garlic
2-3 drops red pepper sauce
Salt and cayenne pepper, to taste
Dippers: assorted vegetables, bread sticks, or crackers
Process artichoke hearts, cream cheese, Parmesan cheese, mayonnaise, sour cream, and lemon juice in food processor until smooth. Stir in green onion, garlic, and red pepper sauce. Season to taste with salt and cayenne pepper. Bake in small casserole, uncovered, at 350 degrees until lightly browned, 20 to 25 minutes.
Serve warm with dippers.

Socially distanced outdoor Zumba classes are starting back up at the Sandcastle. Classes begin this Friday, October 23rd, at 8:30 a.m.
Class is limited to the first 9 people to sign up via the same registration system used for the other fitness classes, lap swimming, & pool reservations.

Today's recipe is for BREAKFAST! Need breakfast on the go? Take 2 of these and make a pancake sandwich with nut butter in the middle. YUM! ๐
Whole-Wheat Sheet Pan Protein Pancakes
3ยผ c unsweetened soy milk (or any nondairy milk)
1 T. apple cider vinegar
2ยฝ c white whole-wheat flour
1 serving vanilla plant-based protein powder (about 1/3 cup)
3 T. baking powder
2 T. flaxmeal
1 t cinnamon
ยฝ t salt
ยผ c oil (coconut or olive)
ยผ c maple syrup
1 t vanilla
1ยฝ cups blueberries (fresh or frozen)
Preheat oven to 425ยฐF. Line an 11x17 baking sheet with parchment paper.
In a small bowl or four-cup measuring cup, mix the nondairy milk and apple cider vinegar, and set aside to curdle.
In a large bowl, mix the flour, protein powder, baking powder, flaxmeal, cinnamon, and salt together. Add the oil, maple syrup, and vanilla to the nondairy milk mixture and mix well.
Pour the wet ingredients into the large bowl with the dry ingredients and mix until just combined.
Pour the pancake batter onto the parchment-lined baking sheet, using a spatula to spread it evenly. You'll notice that the batter will be puffy โ that's the baking powder reacting with the apple cider vinegar, and that's what makes these pancakes fluffy. Top with blueberries.
Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
Allow pancakes to cool for five minutes before cutting into 16 squares.
Enjoy with syrup, more fruit, nuts, yogurt, or nut butter. Store leftovers in an airtight container in the fridge for up to five days, or in the freezer for several weeks.

**WARNING** these are SOOOOO good, you may want to eat them ALL BY YOURSELF! These cinnamon toast crunch roasted chickpeas taste just like the cereal. Made with maple syrup, coconut oil and cinnamon, theyโre a much healthier way to snack.
Cinnamon Toast Crunch Roasted Chickpeas
15 oz. can chickpeas, drained, rinsed & thoroughly dried
1/2 tablespoon melted coconut oil
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
pinch sea salt
Preheat oven to 425ยฐF .
Spread chickpeas out on a dry dish towel and peel skins off. This will take about 10 minutes, it's tedious but worth it for crispy roasted chickpeas that won't get soggy!
Spread peeled chickpeas out on a baking sheet and roast for 10 minutes, shaking the pan once so they don't stick.
Meanwhile, whisk together coconut oil, maple syrup and vanilla in a small bowl.
Remove chickpeas from oven pour the coconut oil mixture over top, season with the cinnamon and sea salt and toss to combine making sure all the chickpeas are evenly coated.
Return baking sheet to the oven and roast an additional 12 minutes, tossing once half way through baking.
Turn the oven off, open the door a few inches and let oven cool with the baking sheet still in the oven.
Once cooled, chickpeas will be crispy and ready for snacking! Store in a paper bag to retain crispiness.
Spinach & Mushroom Hand Pies - Yield: 5 pocket pies
Terrific & portable for lunches!
Crust
2 cups King Arthur Unbleached All-Purpose Flour
1/4 cup (1 ounce) finely grated Parmesan cheese
1/4 teaspoon salt
1/2 cup cold unsalted butter, diced
1/2 cup grated cheddar cheese
6 tablespoons ice water
Filling
Cooking spray OR 1 tablespoon butter
1/3 cup diced onion
8 ounces white mushrooms, chopped
8 ounces fresh spinach, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup grated cheddar cheese
To make the crust: Whisk together the dry ingredients.
2) Work in the butter until the mixture is unevenly crumbly. Add the
cheese and water, mixing until the dough is cohesive.
3) Divide the dough in half, pat each half into a disk, wrap in plastic,
chill for at least 30 minutes.
4) To make the filling: Sautรฉ the onion & mushrooms in cooking spray/butter until softened.
5) Add the spinach, salt, and pepper, & cook until warmed through.
Cool to room temperature.
6) Preheat the oven to 400ยฐF. Grease a baking sheet, or line with
parchment.
7) Roll each piece of dough 1/4" thick. Cut out 10 rectangles (about 4" x 5"
8) Put 1/3 cup filling and 1 1/2 tablespoons cheddar cheese onto five of the rectangles. Brush a thin coating of water along the edge of each rectangle
9) Stretch an unfilled rectangle over the filling, and crimp the edges of the pie with the tines of a fork to seal. Transfer to baking sheets.
10) Bake the pies for 18 to 22 minutes, until golden.
11) Remove them from the oven, and serve warm.
Another easy entree!
Three Ingredient Chili
15 oz. can black beans, drained
15 oz. can Mexicorn ( or shoepeg)
14 oz can diced tomatoes with green chilies, Rotele, etc.
Dump all three in a saucepan and heat through.
Top with diced onions, cilantro, light sour cream, shredded cheese...
How about a yummy, super easy entree?
Mexican Quinoa Casserole
Be sure to put in and mix all of the ingredients well BEFORE adding the broth.
Notes:
- Try to buy organic, low sodium when ever possible
- Rinse beans well
- Add extra adobe sauce for more of a ZING
-Add lots of fresh cilantro Herbs not only add great flavor but they aid in digestion & detoxing the body
- If you choose to add cheese, try to make it a small quantity, organic and contains no extra ingredients

COCOA-ORANGE CEREAL AND NUT CLUSTERS
Makes 24
3ยผ cups crunchy whole-grain corn cereal (such as Puffins)
ยฝ cup confectioners' sugar, plus additional for dusting
ยฝ cup chopped pecans
3 T unsweetened cocoa powder
3 T frozen orange juice concentrate, thawed
1ยฝ T light corn syrup
Place the cereal in a large zip-close plastic bag. Press out all of the air and close the bag. With a rolling pin or the bottom of a heavy pan, crush the cereal into fine crumbs.
In a large bowl, combine the crushed cereal, sugar, pecans and cocoa. Stir thoroughly. Add the orange juice concentrate and corn syrup, then stir until all ingredients are well-moistened and the mixture holds together when squeezed into a ball.
Moistening your hands with cold water as needed, form the mixture into 24 small balls. Roll the balls in additional confectioners' sugar to coat.
PER CLUSTER: 51 calories; 1 g protein; 9 g carbohydrates; 1 g fiber; 2 g fat (0 g saturated); 0 cholesterol; 35 mg sodium
I've had a few requests to share healthy recipes/ideas, so I will be posting some on this page.
FYI, I am generally against "fad" eating. Instead, I try to focus on eating veggies, fruits, and whole grains.
