1 cup Kale
5oz Premier Protein Peaches and Cream shake (1/2 shake)
2 Tbsp PB Fit Peanut Butter Powder
1/4 avocado ((add more for higher fat))

16 oz almond milk, unsweetened
8oz water or ice

16oz frozen spinach
4 strawberries
2 tbsp monkfruit sweetener
1/2 avocado
2 celery sticks
16 oz almond milk
178 calories, 10g protein, 9g fat, 6g net carbs, makes 3 servings (16oz each)


Float My Meatball Boat

Will yield 42 meatballs. 6 small meatballs per serving: Macros: 420 calories, 4g net carbs, 31g fat, 30g protein.

Meatball Ingredients:
• 2 lbs of lean grass-fed beef or ground turkey
• 6 tsp Sesame Oil
• 6tsp olive oil
• 4 large eggs
• 1 cup chopped onion
• 2 cups finely chopped cabbage
• 4 tsp coconut aminos or soy sauce
• 4 tsp freshly grated ginger or ground ginger
• 1 tbsp minced garlic
• Salt and pepper to taste
• Rice Vinegar
• 1 ½ tsp Chili paste
Leaf Boat Ingredients:
• Romaine lettuce leaves, (21 +)
• Grilled peppers for ganish and flavor

• ½ cup coconut Amino
• Sesame Oil to taste
• 1 tsp chili paste
• 2 packets Monk Fruit
• 3 tbsp Rice Vinegar

1. If you have food processor: Combine all of the meatball ingredients with the exception of the protein into your food processor and mix for 30 seconds.
2. If you do not have a food processor: finely chop your cabbage, onion, and garlic and mix together in a large mixing bowl. Add the remaining meatball ingredients.
3. Pour your protein into the mixture and blend together.
4. Form mixture into 2”-sized uniform meatballs.
5. In a large skillet (I used two at a time to speed up the process) add 2 tsp sesame oil and 2 tsp olive oil into the pan and fully cook your meatballs, turning after 6 minutes. Meatballs will be fragile so use tongs gently.
6. On a large platter, arrange your romaine lettuce leaves and top with your meatballs and optional peppers. You can use one meatball per boat, two, or three. It is all up to you. Make the presentation your own!
7. In a small bowl, combine your sauce ingredients.
8. Serve lettuce boats with accompanied sauce on the side and enjoy!!

Late brunch after a trip around the neighborhood

Guisada with cheese
Mission carb balance tortilla
2 over easy eggs
1/4 avocado

Dirty Keto-ized Guisada

3lbs boneless beef Shoulder or stew meat
2 tbsp cooking oil
1 can of rotel
1 medium onion, chopped
1 tbsp minced garlic
1 cup bell peppers, chopped
2 cups chicken stock
3 tbsp cumin
2 tbsp butter
1/2 cup heavy cream
Juice of 4 key limes

Brown your meat for 5-7 minutes medium heat with cooking oil

Add all other ingredients, bring to a boil then cover and simmer for 45-1 hour

Serve up on a carb smart tortilla with shredded cheese

Fluffy Chaffles

1 cup almond flour
4 eggs separated (egg white, yolk)
8 oz cream cheese
3 Tbsp Lakanto Monkfruit Sweetener
1/2 cup mix of nut milk and heavy cream, combined
2 tsp psyllium husk powder
2 tsp vanilla extract
2 tsp Cinnamon
1 Tbsp crushed pecans
1 Tbsp Lily’s chocolate chips

Separate egg whites from yolks and place them in two different bowls.

In a large bowl containing the egg yolks, add in all the wet ingredients (cream cheese, vanilla extract, nut milk and heavy cream) and mix well. Then add in the dry ingredients (almond flour, monkfruit sweetener, cinnamon, psyllium husk powder).

Let the mixture to sit to allow the psyllium husk powder to thicken while you prep the rest of the ingredients. If you want to make home made whipped cream, that will allow enough sitting time.

With the bowl containing the egg whites, beat and mix well with a hand mixer for a couple minutes, or until you get light and fluffy texture with stiff peaks.

Pour the whipped eggs whites in with the other mixture and use a spatula to fold. Be sure to fold the ingredients together and not over-mix (important).

Cook in your mini dash Chaffle maker !
Garnish with strawberries, home whipped cream, pecans and Lily’s chocolate chips

This page was originally created when I started my meal delivery service after having my first child and staying home. Cooking has always been a passion of mine so creating a business around food made sense to me. Home cooked meals for breakfast, lunch, and dinner were prepared daily and provided as a pick up or delivery service. Each and every day I would sell out, with God’s blessings.

As live as transitioned, we have moved out of the country and back to Texas. Our family is currently on a Keto diet, transforming this page to recipes, meal ideas, tutorial videos, and macro counting. I test each recipe in my kitchen, modify recipes, create recipes from scratch, then create tutorial videos. Each ingredient list, instruction, and macro count is hand written by myself. The adorable and sweet sous chefs featured in my videos are my daughters Khaleesi and Khassidy. My intentions to incorporate them into my videos are simply to show how you can involve the family in the kitchen, teach your little ones patience and instruction. Spend quality time together in an ever evolving digital world.

I hope to share some of my kitchen tricks, hacks, skills, and passion for cooking. Being a mother and wife can be your greatest joy but also your biggest burden. It is ok to feel both. We are multi-dimensional individuals and do not need to be placed in a box. My hopes and goals are to simplify all parts of the above. To encourage leading with love and patience. Staying in the present moment and find nuggets of joy and peace along the way. Perspective is huge and I find myself happier and in a more calm space when I am surrounded and influenced by positivity and community.
