So I think I've il unlocked the secret to moist turkey burgers:

Mix in about 1/4 cup of breadcrumbs and a tablespoon or two of mayo into the meat. Since mayo is just egg yolks and oil, it will play "moist", but won't run or ooze like if you mixed in liquid oil. Also keeps it from falling apart.
