Will you guys be having more classes in the 2022 year, and possibly in Missoula?
looking for Montana meats, hams, sausage, fish, anything Montana to serve for catered and Farm to Table events... has to be LEGAL to serve.... thanks!!

Look at the mold looks perfect.
Coppa , bacon, bresaola .. All in cure
Can hardly wait most have over month left before I can eat.
Except bacon it should hit the smoker in a few day
Pancetta coppa in a fennel pepper corn , nutmeg rub . Will be in bag for two weeks then it will hang to dry for around a month , see you in 6 weeks on this
I know it's been quite the last couple weeks but I can't move forward until I have this kitchen that I can use inspected by the state ..darn state...

It’s been some time that I posted on here.
I was a little busy with being a restaurant owner and Covid-19 didn’t help with having any classes. But I think it’s time to get MMC up and going with classes. I’m planning my first class in late November early December.
I’ll keep you posted.

This Sunday October 7 th is basic sausage making class, and at the end of class we cook off some of the sausages and have a drink , and one of the sausages will be a bratwurst, and I made mustard and have fresh in house sauerkraut to serve with it .
This is going to be an awesome and exciting day .
