We offer classes around Western Massachusetts that incorporate teaching cuisines from all over the world. Whether that has to do with cooking techniques, exploration of a countries cuisine & culture or learning a language through cooking.
Pot Au Feu... aka the mother of all french soups... aka the French Ramen soup with potatoes instead of noodles... This soup took all day to make because of a beef broth that simmered for around 8 hours. Gerkins (house made pickles in this case) and dijon mustard (old style mustard in this case) are typical condiments for this heart warming soup.
In Lyon France (the so called culinary capital of France) this is how a traditional "Buchon" (restaurant) might serve bread. Either slices of giant sized "pain de campaign" or slices of baguettes.
