My son LOVES stromboli so we made homemade stromboli. Yum!
You can add fresh spinach leaves or even mix it up and made a Reuben style stromboli with swiss, corned beef, and (well drained) sauerkraut. Use a rye bread dough for your base and sprinkle some caraway seeds on the rolled out dough and Thousand Island dressing as your dipping sauce.

I know technically it's not fall yet but with everyone starting to buy school supplies and think about school lunches I thought this would be fun to share.
Great for quick breakfast, snacks, and on-the-go. Great with added dried cranberries too.
You can pre-prep all the dry ingredients making it super easy to whip up a batch.
Pizza Zucchini a wonderful recipe from my paternal grandmother for the zucchini bounty.
Easy and delicious recipe for Mushrooms.
Sliced baby Bella mushrooms, sautéed in a little oil, sprinkle with a little thyme, a grind of sea salt, and splash with some red wine (delicious with white wine too).
Great for serving for a fancy meal or with burgers or steaks on the grill.
Yum! Potato Salad - looking forward to picnic weather.
Honey Pecan Chicken - the honey was bubbling when I pulled it out of the oven. This recipe is also great in a crockpot.
Served with rice and broccoli as a side (would also be delicious with a Spinach salad with dried cranberries and Feta).

Runzas - you can also make these as a casserole which is how I first had and then found a recipe to make it. I hadn't yet read a recipe that included sauerkraut but yum. I like to use pepper jack as the cheese but american, jack, cheddar, or swiss would work too.
Also my latest brainstorm is to make them with venison.

Mustard Marmalade Brussel Sprouts
A riff on Jill Nussinow's Maple Mustard Brussel Sprouts
Brussel Sprouts (half a bag of frozen that were already defrosted from Trader Joe's)
2 Tablespoons of orange marmalade
1 Tablespoon Dijon mustard
(I was thinking fresh garlic or garlic powder would have been a nice addition too)
1/2 a pear cut up (because it was available, needed to be eaten, and sounded like it would work)
Salt and pepper (used lemon pepper because that's what I have in grinder)
Baked in a 350 oven for 20-25 minutes. I used the oven because it was cold in the house and figured it would help warm it up.
I imagine Jill's IP times would work for this recipe.
Results = YUM!

Quick and Easy Beer Bread
This is a quick and easy recipe.
3 cups self rising flour
1/2 cup sugar
12 ounces beer
I mix by hand (meaning not with a mixer) until smooth. It will be consistency of a thick batter (thicker than pancake batter). Pour into a bread pan. Bake at 350F for 45 minutes.
You can brush top with butter.
My son loves this bread. He asked me to bake a loaf last night.
Just had to share because it's too funny not to. Enjoy!
