Our National Youth Culinary Programme students are enjoying some amazing masterclasses being held in the kitchens at The Ritz-Carlton, Grand Cayman. Last week's class was about making layered and beautifully decorated cakes, filled with chocolate mousse and finished with Italian Buttercream frosting and fondant.
