Chicken Galantine

Dear Friends,
long time no see. It's been a busy summer here in Rome.
I wanted to share with you all a butchering class I did recently.
It shows the technique for skinning a whole chicken, deboning the bird and then using the skin to make a sausage-like preparation called a 'galantine'.
