In honor of May being , we'd like to share a bit of the science behind dry aging -- a way of processing beef that delivers a distinct texture and more intense flavor. 🥩
While it’s certainly not a new technique, dry-aging beef has resurged in popularity in recent decades and can commonly be found on menus in high-end steak restaurants and for sale at grocery stores, even here in Guam. So what’s so special about it?
Our meat scientist Dr. Jeng-Hung Liu explains in this week's UOG Horizons column.

As we’ve seen with Typhoon Sinlaku, storms take a major toll on all types of plants — from agricultural crops to the trees in our yards. But beyond the immediate physical destruction, these storms quietly set the stage for plant diseases to develop and spread. 🍃🌪🌴
Our latest UOG Horizons column dives into what happens after a typhoon hits — when plants that seemed fine start to decline and hidden diseases take hold. Our extension plant pathologist, Dr. Bindu Poudel-Ward, points out some early warning signs and things you can do to combat the most common post-storm threats in plants, like fungal, bacterial, and soilborne diseases.
