"From Childhood Nostalgia to Romantic Blossoms: The Journey of the Humble Aloor Chop"

Aloo'r chop (similar to aloo tikki) was a regular dish in our household as a child. When ever we had guests it was my task to make these crispy potato snacks. Me being me, I would try putting different fillings inside, including tuna or bechamel sauce.

Little did I know, those same skills would come in handy when my future hubby and his family came to my house with the marriage proposal 20 odd years ago.

😅 Amidst all the excitement and nervous chatter, it was the humble Aloor Chop that stole the show, winning over my future husband's heart with its irresistible charm!

Fast forward to today, and every bite of these crispy delights brings back a flood of memories – from childhood giggles in the kitchen to unexpected love blossoming over a shared plate of Aloor Chops! Who knew a simple appetiser could hold the key to unlocking such sweet moments?

Aloor Chop Recipe

Ingredients:
- 4 medium-sized potatoes (boiled and mashed)
- 1 large onion (finely chopped)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt to taste
- Grated cheese (cheddar or any other cheese of your choice)
- Minced meat (optional)
- Bread crumbs
- 2 eggs
- Oil for frying

METHOD
1. **Prepare the Mixture:**
- Mash the boiled potatoes in a large bowl.
- Add the cumin powder, coriander powder, chili powder, paprika, salt and 1 tbs spoon of egg mixture to the mashed potatoes. Mix well until all the spices are evenly incorporated.
- In a separate pan, heat oil and fry the finely chopped onions until they are crispy and golden brown. Drain excess oil and let the fried onions cool down.
- Once cooled, mix the fried onions into the mashed potato mixture until well combined.

2. Assemble the Aloor Chops
Take a small portion of the mashed potato mixture in your palm and flatten it to make a small patty.
- Make a small hollow in the center of the patty.
- Place a scoop of minced meat and a bit of grated cheese in the hollow.
- Carefully enclose the filling with the mashed potato mixture and shape it into a round patty. Ensure the filling is completely covered.

3. Coat and Fry
- Beat the eggs in a shallow bowl.
- Spread the bread crumbs on a plate.
- Dip each potato patty into the beaten eggs, ensuring it is fully coated.
- Then, roll the coated patty in the bread crumbs, covering it completely.
- Dip the breaded patty back into the beaten eggs and roll it in bread crumbs again. This double coating will ensure a crispy texture.
- Heat oil in a frying pan over medium heat.
- Once the oil is hot, gently place the coated patties into the oil and fry until golden brown and crispy on both sides. Flip them occasionally to ensure even frying.
4. **Serve:**
- Once the Aloor Chops are golden brown and crispy, remove them from the oil and drain excess oil on paper towels.
- Serve hot with your favourite dipping sauce or chutney.

****Delicious Dynamite Chicken****

Perfect for Iftar time.
You can also make crunchy Dynamite Chicken Wings. The recipe is in my new book. Available to order from the link in my bio.

INGREDIENTS
500g Frozen chicken fillet (battered)

3 tbs mayonaise
1 tbs tomato ketchup
1 tbs siracha hot sauce
1/2 tsp honey
1 tsp soy sauce

Method
1. Take a bag of chicken fillet, place half in the airfryer, spray with olive oil and cook for 20 minutes until chicken is well cooked.
2. Place all the sauce ingredients in a bowl and whisk until smooth. I added 1 - 2 tbs water as I like my sauce a little runny.
3. Add the chicken in the sauce and mix well.
Garnish with chopped spring onions and chives.

We had ours with garlic butter pitta bread and salad and the boys had fries with it.

Enjoy.

Aam Dhud bhaat

Is a delectable dish with hearty goodness that Bengalis enjoy. Its not a dessert per se, but a pre-dessert, after meal treat.
It's a combination of sticky rice with juicy mango pulps, drizzled with hot evaporated milk, jaggery, toasted coconut flakes, and sprinkled with a pinch of salt. If you're really feeling the richness, then add a dollop of mishti doi.

There's so many flavours in one plate,
And it tastes like heaven.

As I child I saw my dadhi (grandma) eat this after every meal. There would be more other goodness that I cannot even name.

So if you're a Bengali, what other thing would you add?

***Ramadan Haleem***

I cannot go through Ramadan without making Haleem. It's a dish I am accustomed having in our house as a child when my bhabi (sister-in-law) used to make it for especial occasions.

I always make it in bulk during Ramadan, then freeze a portion. And during busy evenings when time is not on my side, I'll get a portion of the frozen haleem out and eat for iftar with naan or Turkish bread.

It's a dish thats filling, full of nutrients and very flavourful. Perfect for your Ramadan table.
