Evening! I posted this over on my Cook Stars Newport-Ebbw Vale page but wanted to share it here as well!
👩🍳Cooking and baking for me has always been something I have done to help my soul shine. When I am sad I bake mountains of imaginatively flavoured cupcakes, when I am worried a huge batch of freshly stirred bolognese lifts my spirits, when I am feeling happy I mix that happiness into some vanilla custard made with cream, milk, sugar, vanilla pod and a whole heap of love.
👩🍳It has been proven that cooking helps mental well being in so many ways. Here are a couple that I really resonated with and I wanted to share with you.
✔️ Cooking is meditative.
Because you are concentrating on one thing your mind is focused on the task in hand. The process of weighing, measuring, whisking and mixing creates space in your mind and eases any negative thinking process.
✔️ Cooking stimulates the senses.
The sounds of the mixer, of the metal spoon scraping the bowl, the smell of freshly opened yeast and the sight of a handful of random ingredients blending together stimulates all your senses which in turn increase your feel good endorphins amazing!
✔️Cooking is creative
Sometimes in your work or home life that creative side of your brain doesnt work as hard as it could. Cooking allows that part of you to grow and indeed Psychologists have found a strong connection between creative expression and overall well being- so go on get those creative juices flowing!
And finally my favourite of them all!
✔️Cooking brings people together.
In this world of faceless texting, emailing and spending more time looking at a screen than each other what is more precious than spending time with people you love, chatting about your day over a bowl of steaming red pepper soup and home made sourdough bread, or having friends around to trial a new recipe cooking can work its magic.

I've just come back from Lidl...they have their veg on at 8p a bag for carrots, parsnips, potatoes, sprouts so a real bargain BUT only if you use them all up!!
I think they have some onions and turnip as well...I couldn't see with the mass of hands!!
I witnessed madness with people putting 20 bags of each in their trolley ( we didn't use 1/2 as much as that for 64 people yesterday!!)
So I thought I would pop a post on in regards Christmas veg preparation and stopping the food waste!
So if you buy your potatoes, carrots and parsnips now they probably won't be at their best in 6 days time BUT you can get ahead of the game and prepare AND cook them all now, freeze then reheat on the day!
If you prep like you would normally, and then roast as normal until they are just shy of how crispy you like them.
Let them cool and then pop on a baking tray and freeze flat
Then take out and pop them in a freezer bag.
You can cook them in Christmas day from frozen ( allow about 25-30 mins to crisp up in the oven or 15-20 mins in your air fryer)
If you like boiled carrots rather than roast, blanch them ( so boil then cook for about 5 mins) drain , allow to cool then pop them in the freezer bag to freeze. Cook from frozen ( around 10 mins) on the day
The same with your sprouts!
I also get ahead and make my cauli cheese and freeze as well, but I do defrost that before cooking!
Remember it is just a Sunday roast with a few pigs in blankets thrown in!!
EVERYTHING that you have on your Christmas Dinner plate can be frozen afterwards, the turkey bones make amazing stock ( just boil with some wonky veg you find in the bottom of your fridge) that you can freeze for soups and gravies.

We are almost ready!!!
Part of owning a CiC is giving back!
This year we have worked with the wonderful ABLE community since September thanks to grants from Food 4 Growth Torfaen and The National Lottery Community Fund and as we love working with them so much I agreed to volunteer to make their Christmas lunch!!
So today the prep started. Alongside the lovely Maria, Sharon and Natasha we have prepped a MOUNTAIN of vegetables!!
Tomorrow we get to work together to provide 60 service users with their Christmas lunch...I can't wait to show you the after pics!!
But for this evening I am resting my thumbs ( is there such a thing as peelers thumb?!) Ready for the early start tomorrow 👩🍳⭐️🎄
Maria had a lovely time this week with the ABLE cooking crew.
Wednesday was easy peasy cheesy rice which the crew are now super good at making independently and Thursday was ofcourse PIZZA 🍕 😋
I popped in to drop off some stuff for next week's Christmas lunch and the girls were having a great time!

Maria and the ABLE chefs made quick work of their lunch today....it was an old favourite Burgers and wedges.🍔 I also remembered to buy lots of tomato sauce as I am always told off for not bringing any with me 🤣
Whilst I was with the Woodlands parents making absolutely delicious chicken fried 🍚 and bacon 🥓 and peas creamy pasta. We were missing a few parents so everyone got to make double portions...no waste here! ( and no complaints they had to make extras either!)
They also graduated so we had to take a celebratory picture!!

I absolutely LOVE this picture from the ABLE awards night. This is my award winner...
Nigel is an absolute star, when we first started working with the crew there Nigel wouldn't try anything new, and had never really cooked.
Fast forward a short couple of months later and we can't get Nigel out of the kitchen....AND he made his Dad spaghetti bolognaise at home for the FIRST time ever!!
I am SO proud of Absolutely ALL our Able chefs they all work incredibly hard and are SO positive in what they do it is a joy to work with you all!
( Nige my goal is now to get you to try 🧀!!)
We have had a busy week here!
Maria was with the ABLE crews on Wednesday and Thursday. On the Menu for Wednesday they had a new challenge of Singapore Rice, they all smashed it!🍚
On Thursday the ever popular Pizza was on the menu, they had pineapple to add to the growing list of toppings!! 🍍
On Friday I was with the Woodlands parents for their session 3.
On our menu
Breakfast- sausage and egg muffin 😋
Lunch- Cheese and potato pie 🥧
Dinner- Chicken and potato curry 🍛
The kitchen ( staff room) smelt so good the teachers and kids kept "popping in" !!
( I also had to wear my Pudsey ears!!)
I am having a weekend off ( apart from a mountain of ironing and a huge amount of food shopping!) But looking forward to next week...
Maria will be with Able on Wednesday and Thursday ( easy peasy rice and burger and wedges!)🍔
I will be with my Tuesday crew, Woodlands on Wednesday and Llantarnam School Parents on Friday!
We will be looking at NEW sessions for the NEW year soon so any suggestions or requests please let me know!!📩

Well done ABLE for putting on an AMAZING awards ceremony tonight, I was SO proud to be sponsoring and presenting the Masterchef award.
ALL of the service users that Maria cooks with weekly were worthy of the award but the winner has come on leaps and bounds in the kitchen, and made his Dad spaghetti bolognaise for the first time ever! How fantastic is that!
Thank you to the team at Able for being wonderful and welcoming Maria and I into the family!!

Wednesday's chefs made quick work making their easy peasy cheesey rice, Maria was really impressed everyone remembered the instructions!
Today's chefs made their new recipe of burgers and wedges. They all enjoyed using the newest piece of equipment...the burger press!
We both are really looking forward to seeing everyone dressed up for the Awards tomorrow!
